CreamY 10 minute Caesar salad. This salad takes 10 minutes to make and one second to devour. You can absolutely add protein of choice like grilled chicken, chickpeas, or anything else you desire. Feel free to toss in some croutons or simply leave it super simple like I did. This caesar salad will be on rotation all year long and I know you will absolutely love it as a side, for every barbecue, lunch, or dinner.
INGREDIENTS
1 minced garlic clove
juice of a whole lemon
1 tablespoon dijon mustard
tiny splash of Worcestershire sauce
½ cup of Vegenaise — or any mayo
2 tablespoons olive oil
¼ cup grated parmigiano reggiano — any good quality parm
½ teaspoon anchovy paste — you will never taste it but leave it out if you want
pepper to taste
½ a head of chopped
romaine lettuce

Crispy Potato Caesar Salad #shorts

For the salad
750g new potatoes, halved
42tbsp olive oil
4 streaky bacon
100g cos lettuce, roughly chopped
4 spring onions, finely chopped
.
For the sauce
2 anchovy fillets in oil, drained
1 clove garlic
1 egg yolk
2 tsp Dijon mustard
1 tsp red wine vinegar
45ml olive oil
15g parmesan cheese, grated plus extra for serving
Salt and pepper

1. Pre-heat the oven to 200 fan. Tip the potatoes into a roasting tray and drizzle over the oil and season well. Toss together and roast for 30 minutes. Drape the bacon around the potatoes, towards the edge of the tray is best where it’s hottest, and cook for 15-20 minutes or until the bacon is crispy and potatoes golden. Remove from the oven and leave to cool for about 10 minutes whilst you make the sauce.
2. Put the anchovies into a bowl or pestle and mortar with the garlic and a pinch of salt. Mash into a paste.
3. Put the egg yolk into a mixing bowl and add the mustard, red wine vinegar and a pinch of salt and pepper. Whisk together. Add the oil, whisking continuously, a little at a time until combined and glossy. Add the Parm and whisk together. check the seasoning and add salt and pepper to taste.
4. Add the slightly cooled potatoes, lettuce and spring onions. Rip in the bacon and toss together. Tip onto a serving plate and grate over some more parmesan, Serve immediately

By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.
Following that thought put me and my partner, George on a plane to Alicante Spain in 2014 where we have lived ever since. Our mission is to explore the aromas, ingredients and collective imaginations that are all part of Spain’s vast culinary heritage.

Healthy Chicken Caesar Salad | Jamie Oliver
Jamie’s chicken caesar salad is lighter, fresher and half the calories of a regular caesar salad while still high on flavour. Replacing the mayo sauce with a quality yogurt dressing slashes the saturated fat content and using skinless chicken breasts sprinkled with rosemary keeps the dish lean. Finish with a grating of parmesan and tuck in.
