How To make "English" Muffins (Bakestone Recipes)
1 lb All-purpose or bread flour
1 t Salt
1 1/2 tb Dry yeast
1 t Sugar
8 fl Warm milk and water
2 oz Butter, melted
(Note: Over here, and in England, these are just called "muffins", and are the ones in the song about the Muffin Man who lives in Drury Lane. They did actually sell them door-to-door every morning in London until the turn of the century or thereabouts.) . Sift the flour and salt into a bowl and leave in a warm place. Dissolve the yeast and sugar in 1/4 pt of the warm milk and water. Leave to froth, then mix in the fat. Stir all the liquid into the warm flour and beat well until smooth and elastic. Cover and prove in a warm place for 50 minutes or until doubled in bulk. Turn onto a well-floured board and knead, working a little more flour if necessary to make the dough easier to shape. Round up the dough, roll into a thick sausage shape and (using the sharpest knife you have) slice into 8 to 10 portions, each about 1 1/2 ~ 1 3/4 inch thick. Shape each one into a round
with straight sides. Put onto a greased baking sheet. Cover (I use greased plastic wrap) and put in a warm place to prove for 30-40 minutes or until springy to the touch. Leave room for expansion and be careful not to over-prove, as the muffins will get flabby and lose their shape. Warm and grease the bakestone lightly. Lift the muffins carefully onto the bakestone and cook over very moderate heat for 8-10 minutes until pale gold underneath. Turn and cook the other side. Wrap in a cloth and keep warm if cooking in batches. To serve, insert a knife in the side, pull the top and bottom slightly apart, and insert slivers of butter. . These are strongly recommended. The taste of them hot off the bakestone, griddle or frying pan makes Thomas's look very poor indeed by comparison.

BEST Welsh Tea Bread! - 1940's Bara Brith Recipe
This recipe is a recommendation from a viewer and is hands down in my top 5 of the recipes I've made on this channel so far that have been so amazing they now have a permanent spot in my personal cookbook. My goodness, the Welsh seem to have some of the most wonderful recipes (well, out of the 4 I've tried thus far).
But seriously, try this out. Not only is it good, it is made even better by the fact that it was a recipe from the 40's that used ration items like powdered egg and carrots in lieu of dried fruit. I would have been A-OK with being served this as a wartime birthday cake.

Homemade Crumpets (recipe)
Fancy making your own Crumpets, follow this recipe for perfect Homemade Crumpets that taste delicious drenched in butter.Crumpets are great anytime of day but perfect for breakfast with a cheaky bit of Jam.
Ingredients :
250 ml of warm Milk
7g packet of dry yeast
1 tsp Caster Sugar
150 g Strong (Bread) Flour
1/4 tsp Bicarbonate of soda
1/4 tsp Salt
Oil
Method :
Sift the flour into a large mixing bowl.
Add the rest of the dry ingredients, Yeast, Caster Sugar,Bicarbonate of soda & Salt. Mix together well with a fork.
Warm up the milk then add it to the bowl.
Whisk it in using a fork until if forms a runny paste (The consistency of double cream)
Cover with a cloth and leave to prove for around 45 minutes or until little bubbles form on the top.
Add a small amount of oil to a flat frying pan or a bake stone and grease up a 9 inch egg ring.
Get the heat on low under the pan or bake stone and let it heat up for a few minutes.
You can cook as many crumpets at a time as you like but two is probably enough to start with.
Put each egg ring on the bake stone or pan and add 50 ml or 1/3 fill the egg ring with crumpet batter.
Let the crumpet cook for 5 minutes or until all of the bubbles have popped and the top of the crumpet is full of holes and the batter is mostly dry.
Remove the egg ring and flip the crumpet over, continue cooking for a further minute or so that the top is a light brown.
Re-grease the pan and the egg rings and repeat until all of the crumpets are cooked.
