How To Make Carrot Cake- with Cream Cheese Frosting
My lovely wife is, without a doubt, the baker in the household. However, my obsession with the kitchen won't allow me to leave her alone in there lol. This is her Carrot Cake Recipe, with a few adjustments made by yours truly. It's super moist, delicious, and a lot easier than it looks! Enjoy! (Full Recipe and Ingredients list below)

Ingredients:
2 1/2 cups All Purpose Flour
1 cup granulated sugar
1 cup brown sugar
1.5 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsps cinnamon
1/2 tsp nutmeg
1 cup vegetable oil
1 stick melted unsalted butter
4 eggs (room temp)
1 tbsp vanilla extract
3 cups grated carrots (do not use the already shredded kind)
1/2 cup raisins (optional)
1 orange (zest)
Cream Cheese Frosting:
1 stick melted butter
8oz cream cheese (room temp)
1 tsp vanilla extract
1/4 tsp salt
4 cups powdered sugar
1 shot of bourbon
1 tbsp orange zest
Instruction
Preheat oven to 350F (175C) and prepare two 8 inch cake pans by buttering and adding flour, and then lining the bottoms with parchment paper.
In a large bowl, whisk together the flour, white and brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
Add your veggie oil and melted butter and stir well (the batter is going to be super stiff, I recommend using a hand mixer)
Add eggs, one at a time, mixing after each egg.
Add in vanilla extract.
Mix in carrots a little at a time, until ingredients are well-combined.
Next, evenly divide carrot cake batter into prepared baking pans and bake on 350F (175C) for 40 minutes (toothpick inserted in center should come out mostly clean with only few moist crumbs) (also the internal temp should be 205-210 with a food thermometer)
Allow carrot cake to cool in the pans for 10 minutes, then run a knife around the edge and invert onto cooling rack to cool completely.
Allow cake to cool completely before covering with cream cheese frosting.
Cream Cheese Frosting
Combine butter and cream cheese in a large bowl and use an electric mixer to beat until creamy, well-combined.
Add vanilla extract and sprinkle salt into the bowl and stir well to combine.
With mixer on low, gradually add powdered sugar until ingredients are completely combined (be sure to scrape the sides and bottom of the bowl with a spatula)
Next, add in 1 shot of bourbon or whisky and blend together. Followed by the orange zest. Taste as you go and adjust as you see fit.
Once your cake has cooled completely, cover with frosting.

CARROT CAKE WITH CREAM CHEESE FROSTING
2 cups all-purpose flour
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon cinnamon powder
½ teaspoon fine salt
½ cup coarsely chopped walnuts (or any nuts of your choice)
1 cup corn oil (or any type of vegetable oil)
1 cup brown sugar OR muscovado OR coconut sugar
3 whole eggs
2 cups grated carrots
½ cup crushed pineapples
1/3 cup non-fat milk
Cream cheese frosting:
1 cup cream cheese, at room temperature
1/3 cup salted butter, at room temperature
¼ cup powdered sugar
Notes:
- Bake the cake in a preheated 350F (160-170C) oven, baking time varies depending on the size of pan that you use.
- We used a 10-inch Bundt pan. Baking time: 55-60 minutes, OR until the top exterior of the cake is almost dry when touched.
