This 100% Whole Wheat No-Knead Sandwich Loaf Will Stay Soft for Days
We have made this loaf before. It was extremely sticky and messy. It involved resting and plenty of kneading. The bread was great in the end and a lot of you enjoyed it, but it took quite an inelegant method to produce. The no-knead and cold fermentation methods are here to solve the issues of the previous recipe. The result is pretty much the same. A very soft, springy, and flavourful whole wheat loaf that will stay soft for days.
If you don’t want to cold ferment this dough, then let it bulk ferment at room temperature for 2 hours or until it has doubled and continue as per recipe.

How to Make a 100% Hydration Whole Wheat Bread by Hand | No-Knead Recipe
This 100% whole wheat 100% hydration no-knead bread is easy to make and super tasty. Not too long ago I posted a video for a 100% hydration no-knead bread that was made with white flour. As soon as I posted it people started asking me about a whole wheat version of it. So, here it is.
The process is identical and all it took to convert the recipe is swapping out the flour. Sometimes the easiest path is the right one. The bread is incredibly light and airy and has a great flavour from the whole wheat flour. It will make amazing sandwiches. Think of it as a super light and soft ciabatta.

Here’s a super simple whole wheat sandwich bread that is so soft and so simple to make!
You’ll be surprised at how incredibly soft this bread was given that it’s 100% whole wheat. It remains soft even after several days.
Storage tip: Once cooled and sliced, place bread in closed brown paper bag then place in an airtight plastic bag and store at room temperature.

100% Whole Wheat Bread
Yield: 1 loaf (9x5 inch or 8.5x4.5 inch loaf pan)
240 g | 1 cup water
45 g | 3 Tbsp milk *almond/soy/cashew
30 g | 2 Tbsp oil *olive/grapeseed/canola
40 g | 2 Tbsp liquid sweetener (add more if desired) *vegan: agave syrup or pure maple syrup; vegetarian: pure honey
10 g | 1 Tbsp instant yeast
480 g | 4 cups whole wheat flour
8 g | 1 tsp salt

RECIPE:
THREE INGREDIENT, ONE-RISE WHOLE WHEAT BREAD
You’ll not believe how easy this recipe is. You’ll want to make this loaf over and over again.
INGREDIENTS
4 ½ cups whole wheat flour (450 grams, or 1 lb)
1 3/4 to 2 cups very warm water
1 teaspoon salt
2 ½ teaspoons dry instant yeast (or quick rise)
(Optional: 1 teaspoon sugar)
HOW TO MAKE:
In a large measuring cup, sprinkle the yeast over the warm water. If you are going to add sugar, add it at this time. Stir well to dissolve the yeast. Set aside for approximately 5-10 minutes to activate the yeast.
In a large bowl, add the whole wheat flour and salt. Combine.
Once the yeast is proved, add it to the flour. Stir all to make sure the flour has absorbed the water. If the mixture is a bit too wet, add a little flour. If it’s too dry, add a little bit of water. With your hand gently turn the mixture over to mix it all together.
Place the dough on a floured surface. Briefly pull the dough into a ball and the flatten it out into a rectangular shape and roll it together to create a loaf shape. Into a greased 8” x 5” loaf pan, add the dough. Lightly cover with plastic wrap and allow to rise to just above the rim of the loaf pan (approximately 35-40 minutes.)
In the meantime, set your oven at 400 degrees. The oven rack should be in the middle position.
Once the bread has risen, place it in the oven. Bake for 40 minutes, until golden brown and it sounds hollow on the bottom of the loaf if you tap it with your knuckles. If you have a kitchen thermometer, the temp should be around 120 degrees.
Place bread on a cooling rack for 5 minutes. Remove it from the pan and allow to cool for about 30 minutes before attempting to slice it. DELICIOUS!!
