7up pound Cake | Pound Cake Recipe - This is a collaboration between In The Kitchen with Elisa and myself and were making our versions of a 7up Pound Cake. This is a excellent video for both the novice and the expert to follow and produce a beautiful and delicious 7up Cake. Ingredients
5 Large eggs at room temperature
3 Sticks of butter softened
3 cups sugar
3 cups cake flour (Pillsbury SoftaSilk cake flour)
3/4 cup of 7up soda
2 TBS Lemon extract
On medium speed...
Mix sugar and softened butter until smooth. Add one egg at a time. Mix until smooth. Add flour...mix. Add 7Up slowly until smooth. Mix in lemon extract.
Preheat to 350 degrees.
Spray or grease and flour a two-piece tube pan. Pour in batter!
Line the outside bottom of the tube pan with foil to prevent spills while baking.
Baked for 1 hour and 15 minutes.

2 STICKS UNSALTED BUTTER (ROOM TEMPERATURE)
1 STICK SALTED BUTTER
3 CUPS GRANULATED SUGAR
5 EGGS (ROOM TEMPERATURE)
1 TBSPN LEMON EXTRACT
1 TSPN VANILLA EXTRACT
8 ozs. or 1 CUP 7 UP
3 CUPS CAKE FLOUR (SWAN’S DOWN CAKE FLOUR)
(BAKING) SPRAY
GLAZE / ICING MIX (OPTIONAL)
1 CUP POWDERED SUGAR
2 TBSPNS REAL LEMON JUICE
PREHEAT OVEN AT 350ºF/175ºC
METHOD
USING A HAND MIXER, BLEND THE BUTTER AND SUGAR IN A LARGE BOWL FOR ROUGHLY 4-5 MINUTES UNTIL THE BATTER IS LIGHT AND FLUFFY; ADD THE EGGS ONE AT A TIME AND MIX WELL. AFTER ALL THE EGGS ARE WELL INCORPORATED INTO THE BATTER, ADD THE LEMON AND VANILLA EXTRACT AND MIX WELL.
ADD 1 CUP OF FLOUR AND MIX WELL
ADD HALF OF THE 7 UP AND MIX WELL
ADD THE 2ND CUP OF FLOUR AND MIX WELL
ADD THE REMAINING HALF OF THE 7 UP AND MIX WELL
ADD THE 3RD CUP OF FLOUR AND MIX WELL TO COMBINE.
*****SPRAY BUNDT PAN WITH BAKING SPRAY*****
POUR THE BATTER INTO THE CAKE PAN, GIVE THE PAN A COUPLE GENTLE TAPS ON YOUR COUNTER TO MAKE SURE THEY ARE NO AIR BUBBLES AND BAKE FOR APPROXIMATELY 60-80 MINUTES OR A TOOTHPICK COMES OUT CLEAN. WHEN DONE REMOVE FROM OVEN AND LET COOL COMPLETELY BEFORE REMOVING FROM PAN. SET THE CAKE ON A STAND OR CAKE DISH AND GLAZE.
IN A SMALL BOWL, WHISK THE SUGAR AND LEMON JUICE AND MIX WELL TO COMBINE. SPOON OVER CAKE.
OLD SCHOOL 7 UP POUND CAKE (FRIDAY NIGHT CAKE SEGMENT OF THE WEEK) (MOMS BIRTHDAY MONTH FAVORITES)

RECIPE/INGREDIENTS
1½ Cups Unsalted Butter, room temperature
3 Cups Granulated Sugar
5 Whole Eggs, room temperature
1 Tablespoon Lemon Extract
1 Teaspoon Pure Vanilla Extract
8 Ounces 7up Lemon Lime Soda, room temperature
3 Cups Cake Flour
Additional butter & cake flour to coat the inside of the bundt cake pan
(Note: This cake does not have baking soda or baking powder. The eggs are the leavening in this particular recipe.)
Optional Icing:
1 Cup Powdered Sugar
2 Tablespoons 7up Lemon Lime Soda (or Ginger Ale)
Directions
Preheat oven to 350 degrees
In a large bowl using a hand mixer, blend the butter and sugar until light and fluffy, takes about 5 minutes. Next, add the eggs to the batter one at a time until each one is thoroughly blended. Add the lemon and vanilla extracts, mix well.
Next, add the cake flour and 7up to the batter alternately beginning and ending with flour. Be sure to stop periodically to scrape down the sides of the bowl. Mix on medium speed (Here’s the rhythm: 1 cup flour, mix; ½ cup 7up, mix; 1 cup flour, mix; ½ cup 7up, mix; and the last cup of flour, mix.) The batter should be well incorporated.
Finally, using your hand or clean paper towel, rub the inside of a bundt, or angel food, cake pan with room temperature butter, just a thin even coating. Then put about a ¼ cup of cake flour into the pan and roll it around allowing it to stick to the butter in the pan, again, just a thin coating. Shake out the excess flour. Pour the cake batter into the cake pan evenly. Bake at 350 degrees for about 1 hour and 10 minutes or just until a wooden skewer comes out clean.
Cool the cake in the pan for 10 to 15 minutes, remove and place it on a plate or cooling rack to finish cooling for about an hour.

Hello, Merry Christmas, and Happy Holidays my Friends!
Hope everyone had a wonderful Thanksgiving! On the third episode of my ChristKwan Series, I am making an old school, southern classic, scratch-made 7UP Pound Cake! Simple, easy, deliciously rich, and full of Lemon-Lime flavor; drizzled on top with a 2-Ingredient 7UP Glaze! If y’all a fan of 7UP Soda and citrus, this cake is calling your name! Perfect to serve for your Holiday dinner, Soul Food Sunday, or anytime of the year!
1 1/2 cups (3 sticks, 24 tablespoons) unsalted butter room temperature
3 cups white sugar
3 cups cake flour, sifted or whisked
5 extra-large eggs, room temperature
Zest of 1 lemon
Zest of 1 lime
1 teaspoon pure vanilla extract
1 teaspoon pure lemon extract
1 teaspoon pure lime extract
1 cup fresh 7UP soda, room temperature
Lemon and lime slices, for garnish (optional)
Whipped cream or vanilla ice cream, for serving (optional)
7UP Glaze
1 cup powdered sugar, sifted or whisked
2 tablespoons fresh 7UP Soda, room temperature
For the Cake
Preheat Oven to 350 Degrees. Spray a 10-inch bundt pan with baking spray or grease with butter and flour. Set aside.
In a stand mixer with paddle attachment or large bowl with an electric hand mixer, add in the butter and sugar; cream on medium speed until fluffy. Next add the eggs one at a time, beating after each egg (scraping the bowl occasionally). Add in the lemon zest, lime zest, vanilla extract, lemon extract, and lime extract; continue mixing until well combined. Add the cake flour alternately with the 7UP soda beginning and ending with the flour and mix until well incorporated (be careful not to over mix). Pour the cake batter into the prepared bundt pan, shake and bang the pan to get rid of air bubbles. Bake for 1 hour and 10 minutes or until toothpick in the center comes out clean. Remove from the oven and cool in the pan for 20 minutes. After 20 minutes, flip the cake onto a cake stand and let it cool completely. Drizzle the 7UP glaze evenly on top and let it harden. garnish with lemon and lime slices (if desired), serve with whipped cream, vanilla ice cream, or a cup of hot coffee (if desired) and enjoy!
For the 7UP Glaze
In a medium bowl, add in the powdered sugar and 7UP Soda; whisk or stir until well combined (the glaze will be thick)

Ingredients:

Preheat oven 350

Today I am making a classic Southern/Soul Food Pound Cake, 7UP Pound Cake! But with a twist making a Semi-Homemade version using a Box Cake Mix!!
It is super moist, tender, and we are going to add some fresh and natural lemon-lime Ingredients that will take this cake to the next level and it taste like you made it from scratch and drizzled with a yummy 7UP Glaze; perfect Summer Dessert for BBQs, Crawfish Boils and Fish Frys, also for the Juneteenth Holiday coming up!

1 (18.25 ounce) box yellow or golden butter cake mix
1 cup all-purpose flour, spooned and leveled
1 cup white sugar
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
4 extra-large or jumbo eggs, room temperature
1 (5.3 ounce) carton lemon Greek yogurt, room temperature (recommend Chobani)
1 (5.3 ounce) carton key lime Greek yogurt, room temperature (recommend Chobani)
1 large lemon, zest and juice
1 large lime, zest and juice
1 teaspoon pure vanilla extract
1 teaspoon pure lemon extract
1 teaspoon pure lime extract
1 cup fresh (not flat) 7UP lemon-lime soda, room temperature
Lemon and lime slices, for garnish (optional)
Vanilla ice cream, for serving (optional)
2-Ingredient 7UP Glaze

2 tablespoons fresh (not flat) 7UP lemon-lime soda, room temperature

Grease a 10 inch bundt cake pan with baking spray and flour (Baker’s Joy or PAM Baking). Set aside.
In a medium bowl, add the cake mix, sugar, flour, and salt; whisk or sift together until well incorporated. Set aside. In a large bowl with a hand mixer or stand mixer with paddle attachment, add the butter and sugar; cream on medium speed until fluffy. Next add in the eggs one at a time, beating after each egg. Then add in lemon yogurt, key lime yogurt, lemon zest and juice, lime zest and juice, vanilla extract, lemon extract, and lime extract; mix until well incorporated. Add in the flour and cake mix mixture alternating with the 7UP soda, beginning and ending with cake mix mixture. Mix everything until well combined (scrape the bowl occasionally). Pour the cake batter into the prepared bundt pan; shake and bang the pan to get the air bubbles out. Bake for 55 minutes or until toothpick in the center comes out clean. Remove the pound cake from the oven, cool in the pan for 10 to 15 minutes then remove the cake out of the pan and cool completely on a cake stand. Drizzle on the 7UP glaze and let it harden. Cut into slices, serve with lemon and lime slice and a scoop of vanilla ice cream (if desired) and enjoy!
For the 7UP Glaze: In a medium bowl, add the powdered sugar and 7UP and whisk or stir until well combined and get it to the right consistency (you can always add more powdered sugar or 7UP if needed).
