It's beginning to feel a lot like a major Christian holiday! In the middle of the year...
Okay, okay. I admit, I'm just looking to bake comfort food. This is an amazing recipe that I've been making for years. Only recently have I found out that there is another dessert with the same name. (It really is nothing like my recipe but the Racine Danish Kringle Company makes some amazing pastries! Visit them at
This is not a recipe for easily flustered beginners. You definitely need to have some time and patience to work with the dough. Even if it doesn't come out looking perfect, it's still going to taste great.
Many people I know mistake this for baklava. This is NOT baklava! But you can substitute nuts and add spices and make it more like baklava if you want to be creative.
Kringles (yields 6 logs)
Pastry dough
8 oz sour cream
4 oz softened butter
~2.5 cup all-purpose flour
Filling
2 sticks cold butter, cut into 12 long slices
3 cups chopped pecans
3 cups brown sugar
Glaze
Some powdered sugar
Tiny bit of water (Seriously, I don't know how much of each)
Mix sour cream and butter together. Stir in the flour until the dough just starts to form clumps but doesn't bind into a big ball.
Separate into 6 balls. Form each ball into a rectangle. Wrap in waxed paper and refrigerate for at least 30 minutes. You can keep these up to a few days in the refrigerator.
Preheat the oven to 375ºF.
Flour a piece of parchment paper heavily. Place dough onto surface and flour the top. Roll until super thin and is in an approximate rectangular shape. Place two long slices of butter into the center of the dough. Layer on half of a cup of brown sugar and half of a cup of pecan pieces onto the butter. Do not take this all the way to the edges.
Fold in the two shortest sides so that the fold is at the edge of the filling. Fold in the two longest sides, placing the prettiest one on the top.
Bake for about 25 minutes or until golden brown.
Mix glaze. (Good luck.)
As soon as the kringle is done baking, remove from the oven and immediately glaze. Let this cool for at least an hour. Cut into whatever size pieces you want and enjoy!
Episode 8 - OsloKringle
We chose Oslo Kringle for out last Norwegian recipe. It was pretty good. Kind of eggy, but it might have needed a little more oven time. Either the actual bake or the drying out time...not sure. We will probably make this one again some time. It reminds me of my favorite pastry...Danish Kringle, which uses puff pastry, has a filling, and then is glazed with icing.

The first difference is the addition of cardamom. Cardamom, a spice originally found in India, can be described as warm, comforting and aromatic.
Another difference is that Swedish Cinnamon Buns doesn’t use any frosting or icing.
Swedish cinnamon buns usually have pearl sugar as topping.

Making kanelbullar or Cinnamon buns is so easy.
We can make Swedish cinnamon buns or kanelbulle in FOUR SIMPLE STEPS
1.Prepare the bread dough
2.Divide and shape the dough
3.Proof the swedish cinnamon buns or kanelbullar
4.Bake the swedish cinnamon buns or kanelbullar
Bake them @ 420 F or 215 C for 13-15 minutes.
How to make the sugar syrup for glaze
It is so easy to make this sugar syrup to use as glaze for kanelbulle or swedish cinnamon buns .
Into a saucepan add the 60 g or 5tbsp sugar and 60ml or 1/4 cup water.
Boil and simmer until it gets a syrup consistency.
Remove from heat and let it cool down.
How to store Swedish cinnamon rolls
These homemade cinnamon rolls can be kept at room temperature for upto 3 days.Cover the tray with foil or store them in an airtight container.
