Ingredients
For the Roll-Ups
10 ounces Asparagus
4 slices Ham
For the Bechamel Sauce:
1 Tablespoon Butter dollop
1 Tablespoon All purpose Flour
1 1/4 cup Milk
1/8 Teaspoon Black Pepper
1/4 Teaspoon Salt
pinch Nutmeg grated
For the Topping:
Cheddar Cheese *see Notes, grated

Asparagus Casserole.
Everybody in my family loves asparagus casserole, especially at Thanksgiving or Christmas. It’s really easy and quick to make which makes it a perfect side dish for a rushed-up time of year.
Some folks like boiled eggs in theirs, but my family likes it plain. Wish we could grow it in the South like y’all do in the North.

????BAKED ASPARAGUS CASSEROLE INGREDIENTS:
2 lbs asparagus, fibrous ends trimmed
4 Tbsp butter, divided, plus more to grease casserole
2 1/2 Tbsp all-purpose flour
2 cups half and half
2 tsp garlic salt
1/4 tsp black pepper
1 cup parmesan cheese, divided
1/2 cup Panko breadcrumbs

I chose to make a Cheesy Asparagus Casserole
2 lbs. asparagus washed and ends trimmed and cut into 2 inch pieces
6 oz cheddar cheese shredded
1/2 cup Mayonnaise
Combine these ingredients in a bowl.
heat up 1 tsp olive oil in a pan and add 1 medium chopped onion. When it starts to turn translucent, add two cloves of crushed garlic. Add two Tablespoons of flour and cook until the raw flour smell is gone. Slowly add 1 cup of milk and cook until thickens. Season with salt and pepper.
Add to the bowl and add one teaspoon of lemon juice. Mix until combined and pour into a greased casserole pan. crush 15 Ritz crackers and add 1 tablespoon of melted butter and sprinkle over top of casserole. Place in preheated oven-375-and cook 45 - 50 minutes or until bubbly.

A+ Asparagus
2 pounds fresh asparagus
7 tablespoons unsalted butter
2 shallots, minced
2 garlic cloves, minced
1 12 ounce jar marinated artichoke hearts, drained and rinsed
1 pound baby bella mushrooms, sliced thick
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 cup Ritz cracker crumbs
Cooking spray
2 tablespoons flour
1 3/4 cup heavy cream
1/4 teaspoon cayenne
1 teaspoon smoked paprika
2 cups grated cheddar cheese
Pre-heat oven to 350 degrees.
Hold the asparagus spear with both hands, about two inches from the tip and the end, gently bend the asparagus until it snaps. It will break at the point where the stem is too tough to be enjoyable, discard the stem. Repeat with remaining asparagus. Cook asparagus in boiling water until crisp tender, 2 to 3 minutes. Drain and set aside.
Melt 3 tablespoons of the butter in a medium sauté pan set over medium-high heat. Add the shallots and garlic, and sauté until soft, about 5 minutes. Add the artichoke hearts and mushrooms, and cook until tender, about 10 minutes. Season with half the salt and black pepper. Set aside.
Melt 2 tablespoons of butter and add to a small bowl. Add the cracker crumbs and stir well. Evenly distribute 3/4 of the crumbs into a 9x13 inch casserole dish that has been greased with cooking spray. Spoon the artichoke mixture over top of crumbs and follow with asparagus.
Melt the remaining 2 tablespoons of butter in a saucepan over medium heat. Add the flour and cook until it turns light brown and forms a paste. Slowly whisk in the heavy cream, cayenne, smoked paprika, and remaining salt and black pepper. Cook, stirring often, until a thick sauce is made, about 10 minutes. Pour the sauce over the vegetables and sprinkle with cheese and remaining cracker crumbs. Bake for 30 minutes or until sauce is bubbly and cheese is melted.

Cooking with Nonnie - Asparagus Casserole
Welcome to our next collaboration with Nonnie, my mom. Jessica's mood in this video reflects lots of things, being contrary is the main thing. Jess announces early in this video that Asparagus Casserole is not her favorite. Plus, she would rather jump right into making the banana pudding. However, on this particular day, it was more than food related. The bigger picture is that Jess has moments, days, even weeks where she struggles. But we don't simply let her give up and walk away without a fight. We keep cheering her on. We remind her of her ultimate motivations. This is why it is so important to have big overreaching motivators, like the the idea of being semi-independent in the future, or the dream of becoming a nurse one day. Achieving those things will require tons of work and progress, which makes them the perfect goals to always remind her of when we are helping her through difficult processes.
Let me highlight a few things that she struggles with in this video. First of all, she can't see the strainer in the sink and is afraid to empty the contents of the can of asparagus into the sink. Also, Jessica has impaired fine motor skills. In this example, Jessica is not able to hold a can in one hand and with the other hand use a spoon to empty out the contents. Another thing Jessica always struggles with is tactile defensiveness. You will see her head to the sink to wash her hands each time she gets anything on them. Sometimes, simply the fear of getting something on her hands will stop her from even making an attempt.
Jessica's favorite part of making this and many other casseroles is sneaking ritz crackers into her mouth. Another favorite part is crunching up the crackers to use at the topping of the casserole. The ultimate favorite is eating, of course.
RECIPE
Asparagus Casserole
Bake at 350°F for 30 minutes
1 can asparagus tips
1 10½ oz can cream of mushroom soup
½ can water (use soup can)
½ can evaporated milk (use soup can)
Pinch of garlic powder
1 cup shredded cheddar
Ritz® crackers - Enough to line casserole dish and a little extra to sprinkle on top
Butter to drizzle on top
Mix soup, water, and milk. Heat in microwave for 2 minutes. Add garlic. Line casserole with whole Ritz® crackers about 1 layer deep. Add asparagus. Sprinkle cheese on top. Cover with soup mixture.
Lightly sprinkle with crushed Ritz® crackers. Drizzle butter on top.
Bake at 350°F for 30 minutes
