How To make Aebleskiver(Danish Pancake Balls)
4 c Flour
6 tb Sugar
1 1/4 ts Salt
optional
8 ts Baking powder
8 Eggs :
(separated)
1 1/2 c Cream
2 c Milk
Sift together the flour, sugar , salt and baking powder (set aside). In a mixing bowl beat the egg yolks well, then add the cream and milk. Mix into this the dry ingredients that have been sifted together. Beat egg whites till stiff, and carefully fold into batter. In hot Aebleskiver pan put 1 1/2 tsp. oil in each cup. Then spoon or pour in batter just to the top of each cup. Bake (fry) until delicately brown underneath, loosen around edges with fork, quickly turn and brown other side. Use cake tester to determine when done. Be careful not to get your pan too hot as the aebleskiver burn easily. Serve dipped in sugar or syrup, or good quality jam or jelly. Makes about 50. Æbleskiver, a cherished Danish Christmas delight, boasts a name rooted in its original apple-centric filling, with æble translating to apple and skiver meaning slices in Danish. Traditionally, these delightful spherical pancakes were once filled with small pieces of apple or applesauce, giving them their unique appellation. Over the course of time, the apple filling gradually disappeared from the recipe, evolving Æbleskiver into the form we recognize today.
Ingredients
???? 2 eggs whites and yolks separated
???? 2 cups buttermilk
???? 2 cups all-purpose flour
???? 4 tbsp melted butter (extra for pan)
???? 1 tbsp sugar
???? ½ tsp fine salt
???? 2 tsp baking powder
???? ½ tsp baking soda
???? 1 tsp vanilla extract
???? 1 cup oil for frying (vegetable is preferred)
Directions
???? Whip egg whites in a clean glass or metal bowl using an electric mixer on high speed until stiff peaks form. Set them aside.
???? In a large bowl, combine buttermilk, flour, egg yolks, melted butter, sugar, baking powder, baking soda, vanilla extract and salt. Beat the mixture until it becomes smooth. Gently fold in the whipped egg whites.
???? Heat an aebleskiver pan over medium heat and add approximately 1 tablespoon of vegetable oil to the bottom of each cup.
???? Pour about 2 tablespoons of batter into each prepared cup. As soon as bubbles begin to appear around the edges, swiftly turn them over. (Traditional Danish cooks use a long knitting needle, but a fork will suffice.) Continue cooking while turning the balls to prevent burning.

How To Use an Aebleskiver Pan the correct way
My sister asked how I cook Aebleskivers. This is the best way to cook Aebleskivers because they are supposed to be hollow in the middle with a small opening. The traditional way to spin them is with a knitting needle, but i like the skewers the best.

I purchased this cast iron Aebleskiver pan at an antique / thrift store a few months ago and have enjoyed using it ever since! The Aebleskivers were tasty and easy to make. No yeast needed. The recipe is from myrecipes.com and here is the link.
Although there are many recipes for Aebleskivers, I liked this recipe because it made a small amount of aebleskivers, enough for the two of us. I got about 18 round Danish donuts.
They suggested using cinnamon or cardamon. I used cinnamon. Some Aebleskiver recipes call for separating the egg whites and beating them separately. Although this recipe did not call for that, I did it anyway, and I think that extra step made for a very tasty donut.
Although you can make the Aebleskivers with a filling - some ideas are jam, blueberries, apples, chocolate chip - they can also be made with no filling and the filling can be served on the side. I've topped these with cinnamon and sugar and powdered sugar. They are also delicious with no topping!
