Blind Chef’s How to make Chocolate Bourbon Pecan Cake-Christmas edition
Chocolate bourbon pecan cake with bourbon, pecans, chocolate ganache, chocolate bourbon buttercream, and Hershey's caramel syrup.
Cake Ingredients: 1 box chocolate cake mix with fudge, 3 large eggs, 1 Cup instant coffee, 1/3 Cup bourbon, 1/4 Cup flour, 3 tablespoons sugar, 1 1/2 cup vegetable oil, 2 teaspoon vanilla extract, add 1 cup of pecans to batter. Mix all ingredients. Butter and flour a Bundt cake pan and evenly pour mixture into the pan. Bake at 350° for 40-45 minutes. Let cool for 10 minutes and flip cake unto serving tray.
Chocolate ganache ingredients: 6oz semi sweet chocolate chips and 6oz heavy whipping cream. Place chocolate chips in a bowl and heat up your heavy whipping cream. Pour over the chocolate chips and let sit for 3-4 minutes. Stir until smooth then place in the refrigerator to let it chill.
Bourbon chocolate buttercream ingredients: 1 stick butter, 4oz Cream cheese, 1/2-3/4 Cup cocoa powder, 4 cups powdered sugar, 1 teaspoon vanilla extract, and several tablespoons of bourbon until you get your correct consistency. I used between 12-15 tablespoons bourbon. Whip the butter and cream cheese together until creamy, add and the cocoa powder and mix. Now, gradually add in a cup of Pottered sugar 1 cup at a time alternating with the bourbon and a 1 teaspoon of vanilla extract. You should have a thick and smooth buttercream for spreading.
Optional: soake 1 cup of pecans in bourbon and parch them in oven for a few minutes. Also, add your Hershey caramel syrup to the cake last when decorating it. Watch the video and hope you all enjoy. This will be a great holiday cake for you and your family. The blind bearded chef Zeke.
