How To make All American Salmon Saute w/Mushroom Sauce
1 cn Low-salt chicken broth,
-14 1/2 oz size/ 6 c Sliced mushrooms
2 tb Olive oil
2 Garlic cloves, minced
-Freshly ground pepper to -taste 1/2 c Non-fat plain yogurt
2 ts Cornstarch
4 Salmon steaks, about 6 oz ea
Pour broth into small saucepan. Bring to a boil over high heat and reduce to 1 cup. Set aside. Meanwhile, saute mushrooms in oil in a large skillet over high heat 5 minutes, or until golden brown. Reduce heat to medium and stir in garlic. Saute 1 to 2 minutes. Season with pepper. Add yogurt and cornstarch to reduced broth and whisk to blend. Whisk yogurt mixture into mushrooms. Bring to a boil, stirring constantly until thickened. Remove from heat and keep warm. Season salmon steaks with salt and pepper and saute in a lightly oiled non-stick pan over medium-high heat 10 minutes per inch of thickness, or until fish just flakes when tested with a fork. Turn once while cooking. Arrange each salmon steak on a dinner plate with reserved sauce. Serving suggestion: Try this with Garlic Mashed Potatoes and buttered peas.

Cajun Blackened Salmon with Savory Rosemary & Mushroom Cream Sauce
Hey, what's up, y'all! In this video, I'm showing you how to make the most amazing, succulent cajun blackened salmon with a hearty and savory rosemary and mushroom cream sauce! This recipe is a riff on a dish my mom made for the family when we were growing up. She used canned salmon, Campbell's cream of mushroom soup and celery to create a dish that is so delicious I needed to recreate it! I'll show you step-by-step how to cook the salmon to perfection and how to make the rosemary mushroom cream sauce, which can also be enjoyed with other dishes from baked chicken to mashed potatoes! I served this dish with wild rice and sautéed spinach. I really hope you enjoy the video and recipe! See y'all in the next video!
Ingredients
- salmon fillets
- butter
- 2 TB Cajun seasoning
- small container of fresh button or small portobello mushrooms
- 2 sprigs of fresh rosemary
- 1 TB blackened seasoning
- 2 TB Cajun seasnoing
-1 TB fresh cracked black pepper
-1 ts smoked paprika
- 1 cup heavy cream
- 1/4 ts garlic soup base
- freshly grated parmesan cheese
- 1 garlic clove (for basting salmon)
Directions
1. Skin and cut salmon fillet into serving size portions (if necessary) and pat dry.
2. Season both sides of the fish with the Cajun seasoning, pepper, smoked paprika, and blackened seasoning.
3. In cast iron skillet heating on medium heat, gently place in the salmon fillets. Cook on each side for 2-3 minutes, or until your desired doneness is achieved.
4. For last minute of cooking, add in 2 TB butter, the garlic clove, and a sprig of rosemary; baste salmon.
5. In a separate sauté pan, add in 2 TB butter and the sliced mushrooms; cook for 2-3 minutes on both sides of the mushrooms.
6. Add in 1/4 ts garlic base, 2 TB flour, and 1 more TB of butter; stir to incorporate all ingredients.
7. Add in 1/4 cup warm water and stir.
8. Add in heavy cream, a sprig of rosemary, a pinch of cajun seasoning and pepper; stir.
9. Add in 1/2 cup fresh grated parmesan cheese and stir.
10. Serve with wild rice and sautéed spinach or other veggie of your choice! Enjoy!
