WHOLE WHEAT BREAD

⁉️For some may find the dough too wet or sticky but if it’s manageable to knead then it’s not necessary to add flour. The longer it’s being kneaded will become smooth & elastic.
⁉️Every flour may behave differently when absorbing liquid, so in case the recipe's measurement might not be compatible with the quality of your wheat flour or if your dough mixture turned out too wet & seems impossible to knead, then it’s a sign to add flour.
✔️Ingredients
1 cup lukewarm water [240 ml]
2 & 1/2 tbsp honey [38 ml]
1 & 1/2 tsp instant yeast [5 grams]
1/4 cup vegetable oil [60 ml]
1/4 tsp salt
2 & 1/2 cups whole wheat flour [300 to 340 grams] (weight may vary, add up if it needs it coz every flour absorbs liquid differently)

All Bran Seed Rusks
1 kg self raising flour
2 teaspoons salt
2 teaspoons baking powder
2 cups brown sugar
1 cup sunflower seeds
1 cup linseeds
100 g almonds, roughly chopped
1 cup oats
1/2 cup desiccated coconut
2 cups all bran flakes
2 XL eggs
500 g butter, melted
2 cups buttermilk
1. Preheat oven to 180 degrees Celsius.
2. Mix all the dry ingredients together with a wooden spoon.
3. Whisk the eggs and buttermilk together and add the melted butter.
4. Add the the dry ingredients and mix well.
5. Press into a flat greased pan (fills 2 x standard baking trays).
6. Bake for 45 minutes.
7. Turn out onto a cooking rack and allow to cool completely before breaking into “fingers.”
8. Arrange on oven racks and return to oven to dry out for 3 hours at 100 degrees Celsius. Leave in the oven to cool completely.
9. Store in an airtight container.

1 teaspoon baking soda

1 1/4 cup plant-based milk
1/2 cup apple sauce
1 tablespoon apple cider vinegar
1 tablespoon vanilla extract
Optional: vegan butter or oil to grease pan (if not using muffin liners)

Ingredients:
1 cup (90g) Rolled oats
3 cups (375g) All-purpose/Bread flour
1/4 cup (80g) Maple syrup
1 1/3 cups (320ml) Boiling water
1¼ teaspoons Instant dry yeast
1½ teaspoons Salt
2 tablespoons (30g) Melted butter
Directions:
1. In a large mixing bowl, or in the bowl of an electric mixer combine boiling water, oats, maple syrup, butter and salt. Mix and let cool slightly.
2. Add flour, yeast and stir until dough forms. Knead the dough for 7-8 minutes.
3. Place the dough in a lightly greased bowl, cover and let rise 1 hour, until doubled.
4. Gently deflate the dough, shape it into a log. Place the log in a lightly greased 9 x 5-inch loaf pan. Cover the pan, let rise for about 1 hour or it's crowned about 1-inch over the rim of the pan.
5. Preheat oven to 350°F (175°C).
6. Brush with water and sprinkle some rolled oats on top of the loaf. Bake for 40-45 minutes. If the bread appears to be browning too quickly, cover with aluminum foil for the rest of baking.
7. Let cool completely before cutting.

500g sprouted whole grain flour - approximately 3 cups and 2 Tbs (I’m using spelt but whole wheat works well too! If you don’t have sprouted grain flour, you can use any whole grain flour.)
2 tsp himalayan pink salt
2 Tbs unfed starter from fridge
1 ¾ cups room temperature water
¼ cup each of sunflower seeds, pumpkin seeds, black sesame seeds, hemp seeds, and ground flaxseed
Bake at 400 deg F for 1 hour (first 40 minutes with cover on, last 20 minutes with cover off)
