How To make Almond Rice
1 c Long-grain brown rice;
2 c Water
1 ts Low-sodium bouillon granules
2 tb Almonds; silvered
-=OR=- 2 tb Pine nuts;
2 tb Grated lemon zest;
In a medium-size saucepan, bring rice and water to a boil. Turn off heat and let rice stand in water, covered, 6 hours. When ready to cook, add bouillin granules and brine to a boil. Cook 10 minutes until water is absorbed and rice is tender. Drain, if necesary. Add almonds and lemon zest. Let stand a few minutes, then fluff with a fork and serve. Apricot & Almond Pulao - Basmati rice that is perfectly fragrant, fruity, and vegan!
This apricot & almond pulao is made using basmati rice, and is so fragrant and fruity! It's perfect for the next time you feel like having rice, but not a typical pulao. The apricots lend a sweet and punchy bite to this fluffy and light version of pulao that also happens to be vegan! Hope you enjoy this apricot & almond rice, and do give it a try the next time you want to change things up! This recipe serves 4-6 people.
INGREDIENTS:
1.5 cups of basmati rice - thoroughly rinsed
1 cup of low sodium vegetable broth
1.25 cups of water
1 medium onion finely diced
2 cloves of garlic finely minced
1 handful of apricots (6-8) chopped into small pieces
handful of almonds (soaked for about 5 minutes and roughly chopped)
3 cloves
3 cardamom pods
2-3 small sticks of cinnamon
1/2 tsp black pepper
1 tsp cumin powder
1 tsp coriander powder
2 tbsp vegetable oil
a bit of salt here and there (keeping in mind the salt in the vegetable broth)

Hyderabadi Authentic Badam Ki Kheer Recipe - How to Make Delicious Almond Rice Pudding
Almond Rice Pudding from Maimoona Yasmeen's Recipes
Ingredients:
Almonds - 100 grms
Rice - 2 tbsp
Full Fat Milk - 1 litre + 1/4th cup + 1/2 cup
Khowa/Mawa - 100 grms
Sugar - 200 grms
Cardamom Powder - 1 tsp
Procedure:
1. Soak almonds overnight or you can soak for about 4 to 5 hours. (Boil almonds to facilitate the peeling).
2. Peel the skin of almonds and grind almonds into a very fine paste.
3. Add rice to a pan. Roast and then grind into a fine powder. (You can also grind rice together with the almonds).
4. Boil 1 litre full fat milk while stirring at times.
5. Add 1/4th cup cold milk to rice powder. Mix well and add this to the pan while stirring continuously so that no lumps are formed.
6. Add the almond paste.
7. Add 1/2 cup milk to khoya or mawa and mix thoroughly till no lumps are left.
8. Add this khowa mix to the pan.
9. Add sugar and cardamom or elaichi powder.
10. Cook for about 5 minutes till the raw smell of sugar disappears.
11. Allow this kheer to cool and once cooled, this kheer or pudding will attain a thick consistency.
12. For chilled kheer, you can refrigerate it for few hours before serving.
13. Dish out and garnish with sliced almonds, cashews and pistachios.
Almonds Rice Pudding is ready to be served.

3 INGREDIENT - Lebanese Rice
This Lebanese Rice is a staple Middle Eastern (Arabic) side dish in my home that I make with only three ingredients: rice, vermicelli noodles and olive oil!

???? RICE INGREDIENTS
2 cups long grain white rice
1/2 cup vermicelli pasta
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
dash cinnamon optional
parsley optional, for garnish
INSTRUCTIONS
1. Rinse the rice with cold water until the water runs clear. Then transfer it to a bowl, and soak with water for 20 minutes. Drain well and set aside.
2. In a medium non-stick pot, heat the olive oil on medium heat. Add the vermicelli pasta and cook, stirring frequently until all the vermicelli is a deep golden brown color. Be careful not to to burn it.
3. Transfer the rice over the cooked vermicelli, and stir to combine and coat the rice with the olive oil. Season with salt and a dash of cinnamon, if desired.
4. Add 4 cups water and bring the mixture to a boil. The water will reduce in the process. Reduce the heat to low, cover the pot and cook for 15 minutes.
5. When the rice is fully cooked, remove from the heat and allow the rice to steam for 5 minutes. Then uncover and fluff with a fork.
6. Serve warm with fresh parsley, and toasted nuts, if desired.
