1/2 c : Almonds, Roasted; Sliced
1/2 ts : Thyme
1 c : Tvp Granules or Flakes
1 md : Onion; Chopped
1 ts : Marjoram

Chicken & Wild Rice Casserole
6 ounce Box Near East Long Grain & Wild Rice
1 Spanish Onion, large & chopped
1 Cup Celery, chopped
Pint Container of Button Mushrooms, washed and thick sliced
2 teaspoons Fresh Thyme
2 Tablespoons Olive Oil
1 Can Cream of Mushroom Soup
½ Cup Sour Cream
2 Tablespoons Apple Cider Vinegar
¼ Cup of Chicken Broth
¾ teaspoon Curry Powder
2 Cups Cooked Chicken Breast, cubed
¼ Cup Parsley, chopped for garnish
1.Preheat oven to 350°F, spray a 9x13 qt baking dish with non-stick cooking spray.
2. In a medium size saucepan cook rice according to instructions on the box, set aside.
3. In a large saucepan, heat olive oil and saute onions until light golden, add celery and stir with a wooden spoon until tender, add mushrooms and thyme, cook for 5 minutes.
4. Combine the mushroom soup, sour cream, chicken broth, curry powder and apple cider vinegar, stir in the chicken. Spread into the prepared pan and cover with tin foil. Bake for 30 minutes.
Rest 10 minutes before serving. Use a serving spoon and serve into a bowl, garnish with parsley.

Meat and Rice Casserole From 1932 - Old Cookbook Show
Casserole of Meat and Rice
2 or 3 cups ground meat
1 level teaspoonful salt
1 small onion
1½ cups tomato sauce
2/3 cup of rice
3 cups boiling water
1 tablespoon butter
Cracker crumbs
Season with salt and pepper
Cook rice with salt in three cups of boiling water until tender.
Line a casserole, or other baking dish, with a layer of cooked rice, a layer of the ground meat, which has been mixed with the ground onion, and one-half of the tomato sauce, then a layer of rice and another layer or meat and so on until rice and meat are all used.
Then pour remaining one half of tomato sauce on top, sprinkle with cracker crumbs, dot with butter and bake in a moderate oven one-half hour.
Serve hot.

Almond Rice Casserole
This casserole is a family favorite my mom made when I was kid. Now it’s my husband’s favorite too. Sausage is a nice change from beef in this casserole. The almonds add a nice crunch to this zesty rice based casserole.
RECIPE:
3/4 to 1 lb. ground pork or sausage
2 T chopped onion
1/4 C celery
1 can (15 oz.) chicken broth
15 oz. water
1 box (6 oz.) Uncle Ben’s Long Grain and Wild Rice with seasoning packet
1/2 C almond, sliced or slivered
1/3 C mushrooms, fresh or canned
1/2 tsp. parsley flakes
NOTE: 3 3/4 C water and 1 1/2 tsp chicken bouillon or chicken soup base could be used in place of the water and chicken stock.
DIRECTIONS:
Brown the ground pork, chopped onion, and chopped celery in a deep sided skillet. Drain fat if needed. Add chicken broth, water, mushrooms, parsley, long grain and wild rice, and as much of the Uncle Ben’s seasoning packet as desired. Simmer in covered skillet for approximately 20 minutes until the rice is tender. Stir occasionally. Add the almonds before serving.
