Homemade Alphabet Soup
Here is what you'll need!
HOMEMADE ALPHABET SOUP
Servings: 6
INGREDIENTS
Meatballs
1 pound ground beef
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon pepper
Soup
2 carrots, diced
1 celery, diced
1 can diced tomatoes
½ cup veggie stock
½ cup alphabet pasta, or any pasta
Cheese, if desired
PREPARATION
In a large bowl, combine all ingredients for the meatballs.
Shape them into small balls and pan sear until the meatballs have a dark brown crust. About 2 minutes on each side.
Take out the meatballs and set aside. Use the same pot combine the soup ingredients and stew for 20 minutes or until the vegetables are soft.
Using a blender, puree the veggies until the soup becomes a sauce.
Add in the pasta and meatballs and simmer for 5 minutes.
Top it off with cheese and enjoy!

Chicken Alphabet Soup Recipe - Kids Love It!

Kids can have a spelling bee and dinner when you serve this recipe that's packed with nutrients.
Ingredients
* 2 teaspoons olive oil
* 1 cup sliced leek
* 1 cup sliced baby carrots
* 1/2 cup chopped green bell pepper
* 1/2 cup chopped celery
* 3/4 cup water
* 3 (14 1/2-ounce) cans fat-free, less-sodium chicken broth
* 2/3 cup uncooked alphabet pasta
* 2 cups chopped cooked chicken
* 2 tablespoons chopped fresh basil
* 1 tablespoon chopped fresh oregano
* 1/4 teaspoon black pepper
Preparation
Heat oil over medium heat in a Dutch oven. Add leek and next 3 ingredients; sauté until tender. Add water and broth. Bring to a boil; add pasta, and cook 5 minutes or until pasta is done. Stir in chicken and remaining ingredients.
