How To make Amigdala Praline (Almond Praline)
1 c Almonds
1 tb Butter
4 tb Sugar
1 dr Lemon juice
Blanch almonds. Put butter, sugar, and almonds in frying pan and brown almonds to light-coffee color, stirring constantly with wooden spoon. Add dro of lemon juice to keep sugar from srystallizing. Pour onto a buttered marble slab, a buttered platter, or buttered baking sheet. Spread out evenly and let cool. Break into pcs., or crumble to use on tarts or ice cream. -----

Bûche ROYAL au chocolat
Voici ma recette de Bûche royal chocolat pas compliquée à faire. C'est un gâteau composé d'une mousse chocolat, un biscuit amande léger et une couche praliné croustillante avec les crêpes dentelles et du pralin
????Biscuit amande :
-120 g de Poudre d'amande
-4 Blancs d'œufs
-125 g de sucre
????Praliné croustillant:
-10 crêpes dentelles (attention, il y en a 2 par emballage)
-60 g de pralinoise
-80 g chocolat au lait
????Mousse au chocolat:
-180 g de chocolat noir ou au lait
-50 g de sucre
-4 jaunes (ce qui fait 3 œufs entiers au final pour la recette)
-30 cl de crème liquide entière (30% de mat. grasse)
✍Réaliser le biscuit : Séparez les blancs des jaunes, réservez les 3 jaunes pour après
Fouettez les blancs en neige, lorsqu'ils commencent à être mousseux, ajoutez le sucre continuez à battre. Les blancs doivent être lisses et brillants
Incorporez la poudre d'amande délicatement dans les blancs en neige, en soulevant la pâte, qui doit conserver un maximum de bulles d'air
Etaler sur une plaque recouverte de papier cuisson, sur une épaisseur égale, et enfourner 15 min à 180°C
A la sortie du four , laissez refroidir puis enlevez le papier de cuisson.
Coupez deux bandes de biscuits: -une de 25*7,5cm
-une deuxième de 24*6,5cm
✍Réalisez la crème mousse:
Fouettez les jaunes d'œuf avec le sucre. Vous obtenez un mélange mousseux clair
Faites fondre le chocolat au micro-ondes ou bain marie, et ajoutez le à cette préparation, laissez le tout baisser à température ambiante
Fouettez la crème liquide, qu'elle soit bien ferme, puis ajoutez au mélange chocolaté.
Versez la crème mousse dans un moule à bûche.
✍Réalisez le croquant : faites fondre le chocolat au lait (au bain marie ou micro-ondes), puis incorporez la pralinoise .Incorporez les crêpes dentelles écrasées, mélangez avec une spatule.
Venez répartir le mélange pralinoise sur le biscuit de 25*7,5 cm, puis placez par-dessous l'autre biscuit de 24*6,5 cm.
Placez le biscuit avec la couche de praliné par-dessous la crème mousse
Mettez au congélateur pour que cela durcisse, pour au moins 4 heures.
Sortez la buche du congélateur 4 heures avants la dégustation.
Saupoudrez de cacao en poudre ou de décorations chocolatées

Masa para Macarrones
60 g claras de huevo ( 1.5 huevos)
4 g claras de huevo en polvo ( ½ cda)
1 g ácido cítrico ( ⅛ cdta)
1 g colorante en polvo soluble en agua ( ⅛ cdta)
134 g azúcar glass ( 1⅛ taza)
190 g harina de almendras ( 1½ taza)
52 g agua ( ¼ taza)
160 g azúcar ( ¾ taza)
Ganache de Mango y Maracuyá
15 g jarabe de glucosa ( 1 cda)
300 g puré de mango ( 1⅓ cup)
120 g puré de maracuyá ( ½ cup)
200 g chocolate blanco ( 1¼ taza)
60 g mantequilla de cacao

Macaron Batter
60 g egg whites (1.5 eggs)
4 g powdered egg whites (½ tbsp)
1 g citric acid (⅛ tsp)
1 g water soluble powdered food coloring (⅛ tsp)
134 g icing sugar (1⅛ cup)
190 g almond flour (1½ cup)
52 g of water (¼ cup)
160 g sugar (¾ cup)

Ingredients:
Biscuits - 500 g
Walnuts or Preferred Nuts - 450 g
Butter - 200 g
Sugar - 250 g
Water - 300 ml
Chocolate - 100 g
Cocoa Powder - 60 g
Milk - 30 ml ( 3 tbsp)
