Here's the recipe!
Combine 1 cup of water, 2 cups of homemade yogurt and 4 cups of rolled oats. Stir and let soak overnight in the refrigerator, covered.
In the morning add..
4 eggs
3/4 cups of melted butter
1 cup of maple syrup
1 cup of milk
3 teaspoons of baking powder
2 teaspoons of vanilla
1 cup of cinnamon applesauce
1 and 1/2 cups of frozen blueberries
1/2 teaspoons of salt
Combine all ingredients in bowl. Preheat the oven to 350° f. Grease large (12 inch) cast iron or 9x13 pan with butter. Bake for 45 to 50 minutes (until golden). Enjoy ❤️

Amish-Style Baked Oatmeal Recipe
Try this recipe for a delicious Amish-style oatmeal - it's an easy and hearty breakfast!

Ingredients:
1-1/2 cups quick-cooking oats
1/4 cup pure cane brown sugar
1/2 cup milk
2 tbsp coconut oil, melted
1 large egg
1 teaspoon baking powder
3/4 teaspoon salt
1 tsp cinnamon
1/4 tsp nutmeg
1 teaspoon vanilla extract
Warm milk or half and half
Fresh fruit, your preference
Instructions:
Preheat oven to 350°. Combine the first ten ingredients; mix well. Spread evenly in a greased 8 x 8 in. baking pan.
Bake 20-25 minutes or until edges are golden brown.
Immediately spoon into bowls; add milk or half and half.
Top with fruit.

BAKED OATMEAL RECIPE
(makes 6 slices)
Ingredients:
1 medium banana
2 tbsp maple syrup or honey
1 egg, or 1 flax egg
1 tsp vanilla extract
1.5 cups milk, dairy or non dairy (360ml)
2 cups rolled oats (180g)
1/4 cup ground oats or oat flour (25g)
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 cup blueberries (150g)
NUTRITIONAL INFO (per slice):
212 calories, fat 4.2g, carb 37.5g, protein 7.4g
Preparation:
In a mixing bowl, mash the banana, then add maple syrup, egg, vanilla extract and milk, and whisk to combine.
Now add the dry ingredients, rolled oats, ground oats, cinnamon, baking powder and salt, and mix it up.
Grease your baking pan (I use 8-inch square pan) and pour the oat mixture in.
Spred the blueberries all over and put in the oven at 350F (180C) for 35-40 minutes.
Let it cool for 10 minutes, then cut into slices and serve with some Greek yogurt or peanut butter.
Enjoy!
Emergency Oatmeal Batter Bread - No Yeast. No Flour.
When you can't get to the store or you can't get the supplies you need this batter bread is the answer. Easy to make, it starts with old fashioned oats that are ground to a flour (includes suggestions for other possibilities if you don't have oats).
Shopping List
Old fashioned or quick oats - I've never tried it with instant
Flaxseed meal or whole flaxseed ground in the blender
Baking soda
Baking powder
Salt
Sugar - or other sweetener like brown sugar, molasses, honey, etc
Eggs
Milk - whole milk, almond milk, fat free milk, or another liquid

Amish Baked Oatmeal a quick grab-and-go protein breakfast
This AMISH BAKED OATMEAL recipe is from my cookbook Real Food on a Budget.
Bake the night before. Terrific quick, healthy breakfast.
1½ C. oatmeal
¼ C. sugar or brown sugar
½ C. milk
¼ C. butter or margarine, melted
1 egg
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Combine all ingredients. Spread in a greased 13 x 9 baking pan. Bake at 350 F for 25-30 minutes, until edges are golden brown. Eat like a granola bar or spoon into bowls and add milk. Top with fruit and/or brown sugar if desired. Serves 4-6.
Note: My boys cut these in squares and eat like cookies with a glass of milk.
