Old Fashioned Iced Oatmeal Cookies | Amy Roloff's Little Kitchen
I remember these cookies from my childhood. It's been a while since I've had or made some of these cookies. All I can say is they are delicious. They have a crisp edge and a soft chewy middle with a little sweetness from the iced frosting. They won't last long on the plate.

Pumpkin bread, muffins and definitely pie seem to be the most popular things to make with pumpkin puree. One of the things I enjoy making are pumpkin cookies with a little chocolate. These cookies are moist and chewy and oh so delicious.

Part 2 of this video will be released by Friday June 26th at noon :)
Get your cookie making gear ready and lets make some cookies! Let me know how they turnout in the comments please :)
Here's the cookie recipe:
4oz room temp butter
Half cup packed brown sugar
Half cup white sugar
One egg
One egg yolk
One tsp vanilla
6oz all purpose flour
Half tsp baking soda
Half tsp baking soda
Half tsp kosher salt
One cup chocolate chips
Half cup chopped pecans (can sub any nut)
Flake salt
Cream butter and sugar 5 minutes until light and fluffy. Bowl scrape halfway through.
On medium speed, add one egg at a time, bowl scrape in between each one. Add vanilla. Beat on high 2 minutes.
Add flour, blend on medium high for 45 seconds to one minute. Bowl scrape and add chocolate chips and nuts. Mix by hand with spatula until combined.
Scoop heaping table spoons 3 inches apart, bake at 350 for 15 to 18 minutes. Depending on the type of oven you have, times may vary.
This recipe is great because the base recipe stays the same, but mix-ins can be interchangeable.
