How To make Angel Cake with Mocha Butter Cream
-Cake 1 1/2 c Powdered sugar
1 c Cake flour
ds Salt 10 lg Egg whites
1 1/2 ts Cream of tartar
3/4 c Granulated sugar
-Mocha Butter Cream 1 1/2 c Butter
4 tb Instant coffee
2 tb Sifted cocoa
2 c Powdered sugar
All dry ingredients should be sifted. Therefore, start by sifting together powdered sugar and cake flour. Add salt. In a large dry bowl whisk egg whites until soft peaks form. Add cream of tartar at the end. Gradually add granulated sugar to egg whites, whisking all the time. Sift 1/3 of flour mixture over egg whites,lightly fold in. Repeat with remaining flour mixture, little by little. Turn batter into a large ungreased tube pan. Smooth top. Bake at 350^ for about 40 minutes or till cake is done. Cool cake. Loosen around edges, remove cake from pan. Make butter cream by beating butter until very soft and smooth. Add coffee, cocoa, and powdered sugar. Beat until very light. [Simple chocolate buttercream Frosting]
1 tsp = 5 ml, 1 Tbsp = 15 ml, 1 cup = 240 ml
115 g (1/2 cup + 1.5 Tbsp) granulated sugar
55 g (55 ml or 1/4 cup) water
28 g (1/4 cup) cocoa powder
280 g (1+ 1/4cup) unsalted butter
1 tsp vanilla extract (optional)
* Using this recipe, you can make a 15 cm (6 inch) 3 layer cake.

In this video I'll show you how to make perfect buttercream frosting, It's my favourite mocha frosting recipe, also know as a coffee buttercream icing recipe! Since making this video, I now prefer to use unsalted butter to vegetable shortening.
???? Buttercream Icing Recipe Ingredients:
* 3 - 4 Cups (750 - 1000ml) Icing Sugar
* 2 Cups (500ml) Shortening or Unsalted Butter
* 1tsp - 1tbsp Flavouring (depending on which flavour you choose. I used Instant Coffee)
* 1 - 3tbsp Warm Water (as needed)
???? Instruction On How to Make Perfect Buttercream Frosting
Cream the shortening or butter in a large bowl with an electric hand-mixer or stand-mixer until super smooth (about 3-5 minutes). Add the icing sugar and be sure to mix it gently by hand until it is mostly incorporated into the shortening or butter to avoid a big mess! Mix on slow and move up to high and blend until super smooth.
Taste the icing to see how you like it. If it's too greasy then add more icing sugar, if it's too sweet then add some more of the butter or shortening. Then blend again until smooth. Add in some of the warm water if the buttercream is too stiff to blend.
Add in your preferred flavour and mix again for another minute. If you need white icing for decorating, then put aside some icing for that in a separate bowl and only put flavour in the buttercream you will be using for filling and crumbcoating your cake.
