Meme's Pantry:
Pie Crust Recipe:
2 cups all purpose flour
2/3 cup shortening
1/4 tsp. salt
Combine above ingredients until pea size crumbs form.
Then add:
2 - 3 Tbsp. cold water (you can add more one tablespoon at a time, if needed.)
Makes 1 double crust pie.

Animal Cracker Dessert | Chocolate Salami Recipe | No Bake Dessert
Hey everyone! What is a Chocolate Salami? It’s a no-bake sweet Chocolate log made with animal crackers, and nuts that’s made to look like a salami - no meat here, I promise! This dessert brings me back my childhood memories, I had it with a glass of milk in the backyard at my friend’s house, back then!
You have to give this Chocolate Salami a try! This recipe is from my mother in law, and it's THE BEST!
INGREDIENTS
2 cup (150g) animal crackers
2 tablespoon (35g) cocoa powder
12 tablespoon (170g) unsalted butter
½ cup (110g) sugar
½ cup (50g) chopped walnuts
½ cup (100g) whole milk
INSTRUCTIONS
1. Break the animal crackers into small pieces, combine with walnuts. Set aside.
2. Place a small saucepan over medium heat, add in whole milk, sugar, and cocoa powder using a whisk to combine, last add the butter and let the mixture cook for 10 minutes until thickened.
3. Pour chocolate sauce into cracker-nut mixture, stir well until all is coated. Let it rest for 10 minutes. Then transfer to a piece of plastic wrap, roll, and seal.
4. Refrigerate for 2 hours, then slice and enjoy with a glass of milk or coffee.

How to Make Animal Cookies
A sweet and simple recipe for Frosted Animal Cookies!

Today's recipe starts with an easy (no-chilling-required) vanilla cookie base and is decorated with royal icing (and sprinkles!).

Ingredients
12 Tablespoons unsalted butter softened
1 ½ cups granulated sugar 300g
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon Princess emulsion¹ or almond extract optional
1 teaspoon salt
4 ½ cups all-purpose flour 560g
Icing
2 cups powdered sugar 230g
1 Tablespoon meringue powder
3 Tablespoons water
1/4 teaspoon vanilla extract
Food coloring² optional
Nonpareil sprinkles optional
Instructions
00:00 Introduction
00:27 Preheat oven to 350F (175C).
00:33 In a large bowl (or in a stand mixer), use an electric mixer to beat butter and sugar together until well-creamed and thoroughly combined.
00:58 Add egg, salt, and extracts, and beat until combined.
02:13 With mixer on low speed, gradually add flour, stirring until completely combined.
03:13 Divide dough into two equal parts. Lightly flour a clean surface and roll one portion of dough to be ¼” thick.
03:50 Cut out animal shape, cutting cookies as close together as possible then regroup any scraps and re-roll to get more cookies. Repeat with second half of dough once you have finished with the first.
04:15 Transfer cookies to parchment paper lined baking sheet, spacing at least 1 inch apart.
05:00 Bake in 350F (175C) oven until cookies are just beginning to turn a light golden brown, about 8-10 minutes. Allow cookies to cool for 5 minutes on baking sheet before transferring to cooling rack to cool completely before icing.
ICING
05:15 Whisk together powdered sugar and meringue powder. Add water and vanilla extract. Use an electric mixer to beat until soft peaks form. Stir in food coloring, if using.
07:05 Holding cookies gently by their base, dip the surface of each cookie in the icing. Return to cooling rack or a wax paper lined baking sheet and sprinkle immediately with nonpareils, if using. Allow icing to harden before enjoying (about 15-30 minutes).
Notes
¹”Princess” emulsion tastes a bit like almond and lemon extract. It’s available in most cake shops or sometimes in the baking section of your grocery store, and you can also find it here on Amazon. If you can’t find it, that’s fine, use almond extract or leave out.

Furikake Animal Cracker Recipe
Ingredients:
1/2 cup unsalted butter
1/3 cup granulated sugar
1 teaspoon salt
1/3 cup light corn syrup*
1/4 cup vegetable oil
2 pounds animal crackers
1/2 cup furikake
*Feel free to substitute with your sugar syrup alternative of your choice.
Directions:
Preheat oven to 250F.
In a medium size pot or saucepan over medium heat add butter and begin to melt. Be sure to stir to prevent burning. Once most of the butter has melted add sugar and salt. Stir until sugar and salt have dissolved.
Remove from heat and stir in corn syrup and oil. Whisk until well combined.
Next evenly spread animal crackers over a rimmed baking sheet. Pour butter mixture over the crackers and stir to evenly coat.
Sprinkle furikake over both trays and stir to coat.
Bake for 1 hour stirring every 15 minutes. Be sure to rotate the pans halfway through baking.
Once done remove from the oven and give it a quick stir before it completely sets. This will help the animal cracker from sticking to the baking sheet. ENJOY!
