How To make Anise Pizzelles
3 1/2 cups flour
6 large eggs
1 1/2 cups sugar
1 ounce anise extract
1 cup butter or margarine -- melted
1/2 tsp lemon extract
4 tsp baking powder
Preheat pizzelle iron. In large bowl of electric mixer, at low speed, beat all ingredients until well blended. Spoon a heaping tablespoonful of mixture onto center of pizzelle iron, or use amount recommended by manufacturer, cover and bake about 30 seconds, Lift cover, carefully loosen pizzelle. Place on wire rack to cool. Repeat with remaining batter. Makes about 4-1/2 dozen. (54 pizzelles; 28 per lb, trimmed)

Traditionally, these cookies are flavored with anise, and in my personal recipe I add even MORE anise. But, this batch I made at the request of my partner. Instead of adding anise to the dough, I added super concentrated watermelon extract. And let me tell you, they turned out so delicious!
MY TOP TIPS FOR MAKING PIZZELLES
????️???? For a crispier and more flavorful cookie use an oil based recipe over ones that contain butter.
????️????Use a piping bag to transfer your batter onto your iron. This cuts down on the mess!
????️????It’s all about the timing. When the sound of sizzling from my iron slows, that is how I know my cookies are ready to go.
????️????DO NOT stack your cookies until they are entirely cool. The steam from the cookies will get trapped and prevent you from getting that perfectly crispy finish.
????️????After your pizzelles have come off the iron and have had a minute on a cooling rack, spread them out on a baking sheet and bake at 220F for 30 minutes in the oven. This will dry them out and ensure you’ll get that perfect snap.

Christy Rost shares a family recipe for Italian pizzelles: light, crisp, anise-flavored cookies that look like snowflakes. Recipe ⬇️
ITALIAN PIZZELLES
Ingredients
1 cup unsalted butter, softened
1 ½ cups sugar
6 eggs
2 ½ teaspoons anise extract
3 ½ cups flour
4 teaspoons baking powder
¾ cup sifted confectioners’ sugar, for garnish
In the large bowl of an electric mixer, cream butter and sugar until light and fluffy. Add eggs, beating well after each addition. Stir in anise extract.
In a medium bowl, stir together flour and baking powder. Gradually stir the flour mixture into the creamed mixture to form a very soft dough.
Lightly grease a pizzelle iron and heat it according to manufacturer’s instructions. Drop a heaping teaspoon of dough on each pizzelle design and close the lid. Bake the cookies approximately 1 minute, or until pizzelles are golden in color. Do not brown.
Open the pizzelle iron and remove each cookie by lifting the edge with a fork. Transfer the cookies to a dish towel covered with paper towels to absorb moisture. Cool 30 seconds. Paper towels will become damp with steam and will have to be replaced periodically. Transfer cookies to another set of paper towels and dust lightly with confectioners’ sugar. Transfer sugared pizzelles to wire racks to dry and finish cooling.
To store the cookies, place a small square of parchment or wax paper between each cookie and stack them in large coffee cans or cookie tins. Cover tightly and store up to several weeks. The anise flavor develops after 24 hours.
Yield: 4 dozen cookies

How to make Pizzelle (classic authentic italian cookies)
PLEASE NOTE that you will need a pizzelle iron to make these cookies.
Follow the baking instructions that come along your pizzelle iron, as the instructions might slightly vary from one maker to another.
Ingredients:
3 large eggs ???? (room temperature)
1 3/4 cups of all purpose flour
1 1/2 teaspoons of baking powder
3/4 cup of sugar
1/4 teaspoon of kosher salt ????
1 1/2 teaspoon of vanilla extract
1 1/2 teaspoon of Anise extract (or any other flavour of your choice)
1 stick (1/2 cup) of unsalted butter ???? (melted and cooled)
Cooking spray
Powdered sugar (optional)
DIRECTIONS:
1) Preheat your pizzelle iron
2) In a medium size bowl, sift the flour, baking powder and salt. Blend the ingredients together with a whisk and set aside.
3) In a large bowl, whisk by hand (or you can use a hand mixer) the eggs, sugar, vanilla and anise extract until smooth and foamy.
4) Stir in the flour mixture and with a spatula combine well. Add the melted butter and stir until the batter is smooth; don’t over mix. This makes for a thick batter.
5) Lightly spray the preheated iron with the cooking spray. Drop about 1 to 1 1/2 tablespoons of batter in the Center of the mold and close the lid.
Cook the pizzelle till they are golden (usually about one minute) and transfer immediately onto a wire rack to cool. Should you have any rough edges, gently break them off.
Repeat these steps for the remaining batter.
6) Once cooled, you may lightly dust the pizzelle with powdered sugar.
Enjoy them with a nice glass of warm milk ????, coffee ☕️ or tea ????!
