* ~ SPICED RUM APPLE CAKE RECIPE ~ *
INGREDIENTS (makes a small 7-inch cake, double for a taller cake or larger tin):
For the cake:
- 60g (4 tbsp) soft salted butter
- 60g (⅓ cup) soft dark brown sugar
- 1 tsp vanilla extract
- 1 large egg
- 80g (⅔ cup) plain or 00 flour
- ½ tsp baking powder
- ¼ tsp bicarbonate of soda
- ½ tsp ground cinnamon
- ¼ tsp ground ginger
- Pinch of salt
- 1 small-medium sweet apple
For the oat crumble:
- 2 tbsp plain or 00 flour
- 2 tbsp rolled oats
- 1 tbsp soft dark brown sugar
- ½ tsp ground cinnamon
- Pinch of salt
- 2 tbsp olive oil or melted butter
INSTRUCTIONS:
For the cake:
1) Preheat your oven – 180 C / 160 C fan / 350 F / gas mark 4 – and grease and line a 18cm (7 in) round cake tin.
2) In a large bowl, beat together your soft butter, sugar, and vanilla for 2-3 minutes until paler and fluffier.
3) Stir in the egg until combined. Don’t worry if it looks a bit lumpy or split, the dry ingredients will fix it!
4) Pour in the dry ingredients and the rum and gently stir in until JUST combined into a thick cake batter. (Over-mixing can make your cake come out tough or chewy, and no one wants that!)
5) Tip the mixture into your prepared tin, and smooth it out evenly.
6) Peel and cut your apple into thin slices.
7) Arrange the apple slices over the cake mixture. Set aside briefly to make your crumble topping.
For the oat crumble:
1) In a medium bowl, measure all your crumble ingredients and stir together until you have a chunky crumble.
2) Scatter your crumble mixture evenly over the apple slices.
3) Bake the cake in the preheated oven for 25-35 minutes (or 35-45 minutes if doubling the recipe) or until risen and deeply golden on top. When ready, a skewer inserted into the centre of the cake should be cleanly removed.
4) Remove the baked cake from the oven and allow it to cool completely in its tin.
5) Release the cake from its tin to serve with a dusting of icing sugar, or cream, or custard, or caramel sauce.
6) Enjoy!

Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!

Like I mentioned in the intro, this was a lost recipe of mine. And If you are like me I get attached to tried and true recipes. So I was so excited when I found it and anxious to get in the kitchen and mess up some pots and pans. And the results came out exactly how I remembered it. It was like finding an old friend you haven’t seen in 40 years.
Moist, dense and full of flavor with warm fall spices and vanilla. Soaked in a butter-brown sugar sauce with Spiced rum. Well you could stop right there but then there are the crunchy bites of pecans and fruity bites of apple in every bite. I mean come on. This cake is a show stopper. You have to try this.
