Cream Cheese bonbons
Here is how to make these incredible cream cheese bonbons, with a design that is made with hot water. Yes my friends, hot water.
Cream cheese bonbons with raspberry gel (90 bonbons Ø 35 mm)
Raspberry gel
250 g raspberries, 25 gr sugar
Put inside a pot and cover with clingfilm. Slowly heat in a covered pot, for the sugar to melt. Don´t stir!
Sif through a paper cloth or tea filter. Don´t force just let gravity do the job.
You need 150 g of juice. Put in a pot with 1.5 g Agar Agar. Boil shortly and cool in a fridge. Then blend to fine gel.
Cream, cheese filling
60 gr cream 35-38% fat, 220 gr Philadelphia cream cheese, 60 gr glucose, 30 gr salted butter, 1 lemon, 1 vanilla pod, 300 gr white chocolate W2 Callebaut or another good quality chocolate.
Warm all ingredients except the chocolate. Warm to 80-85°Celsius (176-190 Fahrenheit). Pour onto the chocolate. Combine. Blend again until smooth. Cool to 28-29°C in a piping bag.
Graham crisp
160 gr Graham crackers, 30 gr brown sugar, 100 gr, butter
Brown the butter in a pot. Blend the crackers with the sugar and add the melted butter. Blend again.
Roll between two baking paper sheets, very thin. Cut while soft. Cool.

Pozdravljeni dragi prijatelji. Kako ste kaj? Zdaj pa se lepo usedite in pazljivo poslušajte kako si bomo razvajali svoje brbončice: Danes vam bom predstavil kraljico hrvaških sladic - Medžimursko gibanico.
Obstaja več različic medžimurske gibanice, vendar je najbolj priljubljena različica narejena iz plasti orehovega, maka, svežega kravjega sira in jabolčnega nadeva, ki so zložene v značilne plasti.
Po eni od legend naj bi medžimurska gibanica nastala kot sladica, ki so jo v Medžimurju pripravljali za obiske cesarja Franca Jožefa I.
Medžimurska gibanica je bila leta 2010 zaščitena s strani Evropske unije in prejela oznako izdelano v skladu s tradicionalno posebnostjo.
Medžimurska gibanica se tradicionalno peče v pečici na drva, kar ji daje edinstven okus. Danes se seveda uporabljajo tudi sodobnejše metode pečenja.
V preteklosti je bila medžimurska gibanica del božične tradicije v Medžimurju, vendar se danes običajno peče vse leto in se prodaja v lokalnih pekarnah in restavracijah.

INGREDIENTES EN GRAMOS
Masa
125 g de mantequilla
80 g de azúcar glass
57 g de huevo
250 g de harina todo uso
1 g de sal
7 g de ralladura de limón
Relleno
500 g de manzanas verdes (3 unidades)
30 g de mantequilla
70 g de azúcar mascabo
1,25 g de jugo de limón
1 g de de canela
Crumble
100 g de mantequilla
100 g de azúcar
100 g de harina todo uso
50 g de Almendras
INGREDIENTES EN TAZAS
Masa
1 ¼ taza de mantequilla
½ taza de azúcar glass
1 huevo
2 tazas de harina todo uso
¼ cdta de sal
Ralladura de 1 limón
Relleno
3 manzanas verdes
2 cdas de mantequilla
¼ taza de azúcar mascabo
¼ cdta de jugo de limón
¼ cdta de canela
Crumble
½ taza de mantequilla
⅓ taza de azúcar
¾ taza de harina todo uso
⅓ taza de almendras
PREPARACIÓN
1. Colocar la mantequilla en el bowl de la batidora junto con el azúcar y batir hasta lograr una preparación cremosa.
2. Luego agregar la ralladura de limón y mezclar ligeramente para integrar.
3. Tamizar la harina e incorporar a la preparación anterior junto con el huevo. Mezclar con la Lira o espátula hasta integrar completamente.
4. Colocar la masa sobre un rectángulo de papel film y extender con un palo de amasar hasta lograr un espesor parejo. Llevar a refrigeración por 30 minutos.
5. Una vez que la masa se haya enfriado, retirar el papel film y cubrir un molde de 22 cm de diámetro, pinchar con un tenedor y quitar el excedente de los bordes.
6. Llevar al congelador por unos 10 minutos antes de ir al horno y precalentar el mismo a unos 175° C/347° F.
7. Ahora que la masa está bien fría, llevar al horno por unos 15 minutos, este paso es solo para darle una precocción, antes del relleno.
8. Retirar del horno y reservar hasta el momento de colocar el relleno.
9. Seguido a esto, lavar y cortar las manzanas bien finas.
10. Colocar el azúcar junto con el jugo de limón y la mantequilla en una cacerola amplia y llevar a fuego medio hasta que la mantequilla se derrita por completo.
11. Pelar y cortar en finas láminas las manzanas, colocarlas en la cacerola y cocinar por unos minutos hasta tiernizar, opcional perfumar con la pizca de canela.
12. Retirar y descartar el jugo.
13. Para realizar el crumble solo debes mezclar los 3 ingredientes con ayuda de un cornet, hasta lograr un arenado. 14. Cortar unas almendras y agregarlas.
15. Cuando las manzanas hayan enfriado ligeramente, colocarlas sobre la tarta, y por último el cubrir con el crumble.
16. Hornear a 175 °C por unos 30 minutos aproximadamente.
17. Cuando la tarta esté en su punto de cocción, retirar del horno y dejar enfriar a temperatura ambiente.
18. Espolvorear con azúcar glass y servir tibia acompañada de lo que más te guste y a disfrutar.
Tips: Para evitar que los bordes de la masa se desmoronen al momento de la precocción, te recomiendo colocar un recorte de papel de horno sobre la masa y un peso, pueden ser unos porotos o cualquier legumbre que consigas.

Ben Patrick makes dunking look easy. Having a 42-inch vertical certainly helps. But believe it or not, it wasn't that long ago that the Clearwater native couldn't even grab the rim.
“I was going to bed dreaming you know being in high school, getting a fast break and being able to dunk. Not thinking that my reality was going to be waking up on an operating table having multiple knee surgeries being nowhere near dunking.”
As a 20-year-old, Ben dealt with chronic knee issues. Now at age 30, he’s able to dunk with ease.
His secret? An unconventional training method called knees over toes.
“When you do a full bend, you grow this tear drop muscle and this one is the fastest twitch which means it reacts quickest when you put impact on it and when you train full bend, you actually grow and thicken your tendons and that’s what holds the muscles together,” said Patrick. “I’ve actually been able to internally transform my knees, therefore the jumping is easier.”
Ben saw how we was able to fix his knee problems and wanted to help others with theirs. So the former basketball player turned trainer founded “Athletic Truth Group” and began sharing knees over toes exercises with the world.
“The backward sled is the foundation of the whole program. When people are struggling with their knees, usually there’s methods of avoiding knees in order to give them a chance to heal but actually the way the knees work they need blood flow to heel. It’s easy to get blood flow to muscles but it’s hard to get blood flow to tendons and ligaments. This allows, if you look at what they’re doing, to drive strength and blood flow to the knees to actively heal faster while getting more protected to not get injured in the first place.”
ATG coach Derek Williams says the knees over toes exercises helped him overcome years of knee pain.
“It’s crazy man. I’m 43. I came in with knee pain, hip pain from when I was a professional basketball player. I thought it was just wear and tear and old age. But then I learned how to train my body properly and I’ve literally reversed my aging. Like I’m back dunking, I’m back training with athletes.”
Now known as the “Knees Over Toes Guy”, Ben has developed a huge social media following and his workout routine even caught the attention of popular podcaster Joe Rogan.
“He’s been in touch with me for a while now, he’s actually been doing the program for over a year,” said Patrick. “So in January I get a message from Joe, you wanna come on the podcast January 18th? So I was like, done! It was amazing, he’s an amazing guy and I couldn’t be more grateful for that.”
While he’s enjoyed seeing his program become so popular, Ben says the most satisfying thing for him is seeing others be able to transform their knees like he did.
All these guys, we all work online, but most of them were like me. Most of them had knee surgeries, thought they’d never play basketball again. Now they’re dunking. So this is what it’s all about for me.
