This Apple Crisp recipe is the ideal cozy fall dessert! It's loaded with fresh sliced apples and topped with a crisp and buttery cinnamon oat topping. It's completely irresistible served with a scoop of vanilla ice cream.

Ingredients
4 lbs firm-crisp apples, 11-12 medium apples*
2 Tbsp lemon juice
3/4 cup granulated sugar, or to taste**
3 Tbsp all-purpose flour
1 1/2 tsp cinnamon
For the Crumb Topping:
1 3/4 cups flour
1/2 cup packed brown sugar
1/4 cup granulated sugar
1/2 tsp cinnamon
1/4 tsp salt
1 cup unsalted butter, (room temperature), plus more to butter pan
1 cup rolled oats, or old fashioned oats

Apple Fritter Cake Recipe
FILLING:
2 apples cored, peeled and diced
1/3 cup sugar
1/4 tsp cinnamon
2 tsp. water
2 Tbsp. cornstarch
SPRINKLE:
1/2 cup brown sugar
1/2 tsp. cinnamon
small pinch freshly grated nutmeg
CAKE:
1/3 cup butter - unsalted
3/4 cup sugar
2 1/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 cup plain greek yogurt (or sour cream)
1/2 cups applesauce - unsweetened
1 tsp. vanilla
2 eggs
GLAZE:
2 cups powdered sugar
1 tsp. vanilla
6 Tbsp. milk
Apple Fillling:
In a saucepan on low heat combine apples, sugar, water,
cinnamon and cornstarch.
Cook on low heat 5-7 minutes, stirring constantly until
the sauce is thickened and the apples are a bit soft.
Set aside to cool.
Sprinkle Topping:
In a small bowl, mix the brown sugar, nutmeg and
cinnamon together until well mixed and set aside.
Cake:
Preheat oven to 350 F. Grease and flour 9x13 baking dish. Set aside.
Cream butter and sugar until light and fluffy, about 3 minutes.
Add applesauce and vanilla until well mixed.
Add eggs, one at a time, beating well after each addition.
Sift the dry ingredients together.
Add 1/3 of the dry ingredients to the batter, add 1/2 of yogurt,
1/3 of dry ingredients, 1/2 of yogurt and then remaining 1/3 of dry ingredients.
Beat until just combined.
Spoon half of the batter into prepared pan.
Spoon the cooled apple mixture over the batter carefully and spread as evenly as possible.
Sprinkle 2/3 of the brown sugar/cinnamon mixture over the apples and cover with rest of batter.
Sprinkle rest of brown sugar/cinnamon mixture over batter.
Bake for 45-55 minutes, or until toothpick inserted into center of the cake comes out clean.
For glaze:
While the cake is baking, make the glaze.
In a bowl mix powdered sugar, vanilla and milk until glaze is desired consistency.
When cake comes out of the oven, immediately, but carefully pour over hot cake.
Try to pour as evenly as possible and spread with a spoon or knife.
Let the cake sit for awhile for the glaze to set.

Apple Spice Cake and Loaf Recipe: Fall Baking

The Dry Ingredients:
• 2 cups all-purpose flour
• 2 teaspoons ground cinnamon
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• ½ teaspoon salt
• ¼ teaspoon ground cloves
The Wet Ingredients:
• 4 eggs
• 1 and ½ cups granulated sugar
• 1 cup of vegetable oil
• ½ cup milk
• 2 teaspoons pure vanilla extract
The add-ins:
• ¾ cup chopped walnuts
• ½ cup raisins
• 2 tablespoons all-purpose flour
• 2 Fuji apples, peeled, cored, and finely diced
• ¼ cup light brown sugar
• ½-1 teaspoon ground cinnamon
The topping:
• 1 Fuji apple, cored and thinly sliced
• 2 tablespoons (approximately) granulated sugar
• 2 tablespoons melted butter
Preheat the oven to 350 °F, 180 °C.
Grease 2 (8.5 by 4.25 by 2.75 inches) loaf pans with soft or melted butter and line them with parchment paper.
Combine the wet ingredients in a large mixing bowl and whisk together until smooth.
Combine the dry ingredients in a bowl and whisk together. Sift the dry ingredients into the wet ingredients and whisk until combined.
Combine the raisins, walnuts, and 2 tablespoons of flour in a small bowl and mix together. Fold these into the batter.
For the Apple Spice cake, pour half of the batter into one of the prepared loaf pans. If you’re making two apple spice cakes then, pour the remaining batter in the other loaf pan.
Combine the diced apples, brown sugar, and cinnamon in a bowl and mix together. Add a tablespoon of flour and mix it together. Add the apples to the remaining batter to make the Apple Spice Loaf. Fold the apples into the batter then, pour it into the prepared loaf pan.
Arrange the apple slices over the batter (both pans) then brush them with the melted butter. Sprinkle the granulated sugar on top.
Bake in the center rack of the oven.
The Apple Spice Cake will bake faster than the loaf. Check them at the 40-45-minute mark by inserting a toothpick in the center of the cake/loaf. If the toothpick comes out clean, then, they are ready.
The Spice Cake should be ready at 45 minutes.
The Apple Loaf cake, that has the diced apples inside, will take longer. Up to 1 hour and 10 minutes.
Remove from the oven and allow the cakes to cool for 10-15 minutes, inside the loaf pans. Run a knife around the edges and take the cakes out of the pans. Set on serving trays and cool completely.
Dust with some confectioner’s sugar and serve with tea or coffee. Enjoy!
Notes:
Granny Smith apples are too tart for this cake. It is better to use Fuji, Gala, Braeburn, Honeycrisp, or any apples that will not melt that are also sweet. Red delicious apples will turn to applesauce.
The Apple Spice cake (without the apples inside the batter) will bake much faster than the loaf. It will be ready in 40-45 minutes.
The Apple Spice Loaf (full of apples) will take at least an hour, depending on your oven, to bake.
Chop the apples very small so that they bake evenly.

Chunky Apple Cake Recipe! Noreen's Kitchen
Greetings! I want it to be fall so badly that I have resorted to trying my best to urge it along! Actually I need to make a lunch treat for the week so that my girls have something yummy to take in their lunches and this is what we are going with. Chunky apple cake is a spiced cake filled with apple sauce, chunky apples, pecans and raisins. Really amazing flavor and it doesn't need any frosting!
This is a very sturdy cake and is perfect for packing in your lunch box or your kids lunch. A little piece goes a long way.
I have served mine with a little bit of powdered sugar and that is really all it needs. In fact you don't even need to do that, you can just serve this all by itself, it is perfect.
