How To make Apple Cranberry Muffins
MUFFINS:
1 3/4 c All purpose flour
1/4 c Sugar
1 1/2 tsp Baking powder
1/2 tsp Baking soda
1/2 tsp Salt
1 Egg
3/4 c Milk
3/4 c Sweetened applesauce
1/4 c Butter or margarine melted
1 c Fresh cranberries :

TOPPING----- 1/4 c Sugar
1/2 tsp Ground cinnamon
In medium bowl, combine 1 3/4 cups of flour, 1/4 cup sugar, the baking powder, baking soda and salt. In small bowl, combine egg, milk, applesauce and butter, mix well. Add egg mixture to flour mixture, stirring just until moistened. Batter will be lumpy. In small bowl, toss cranberries with 2 tb flour, fold into batter. Spoon batter into 12 greased 2 1/2 inch muffin cups. In another small bowl, combine 1/4 cup sugar and the cinnamon. Sprinkle over muffins. Bake in preheated 400 oven 20-25 mins or until wooden pick inserted in center comes out clean. Remove from pan; cool on wire rack. Western New York Apple Growers Assn. 1 ¼ cup (162.5g) all-purpose flour
½ cup (100g) sugar
¼ cup (50g) brown sugar
1 teaspoon (3g) baking powder
½ teaspoon ( 3g) baking soda
¼ teaspoon salt
1 large egg
½ cup (72g) fresh Cranberries chopped
¾ cup (110g) chopped Granny smith apple
¼ cup butter (56.5g) melted and cooled
1/2 cup (120g) milk
½ teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon ginger

These moist cranberry orange muffins are my guilty pleasure which is why I stockpile cranberries in my freezer every winter! They make for a great breakfast or snack and are loaded with juicy cranberries. Hope you love them as much as I do!

Dry:
◾️2 ½ cups all-purpose flour
◾️2 tsp baking powder
◾️¼ tsp salt
Wet:
◾️½ cup unsalted butter, room temp
◾️1 ¼ cup sugar
◾️2 eggs, room temp
◾️1 whole orange juiced and zested
◾️½ cup whole milk, room temp (2% works as well)
Add 2 cups roughly chopped cranberries and bake in oven on 350 for 25-30 min

Apple Cranberry Protein Muffins
Makes 18 muffins
Smart points: 1sp for one muffin and 3sp for two muffins
2 Cups Kodiak Power Cakes
½ tsp baking soda
1 tsp baking powder
2 tsp cinnamon
½ tsp salt
¾ cup apple, diced & peeled
¾ cup fresh cranberries
½ cup sugar free maple syrup
2 eggs
2 tsp vanilla extract
½ cup unsweetened cranberry applesauce
½ cup unsweetened applesauce (if you do not have cranberry applesauce, you can use a total of 1 cup of unsweetened applesauce)
1. Mix dry ingredients. Add fruit to dry mixture.
2. Mix wet ingredients.
3. Add wet ingredients to dry ingredients.
4. Portion out into muffin cups. I used a cookie scoop.
5. Bake at 350 degrees for 15 minutes.

Cranberry Apple Muffins
These Cranberry Apple Muffins make a delicious breakfast or snack. Recipe is below ????
1 1/2 cup brown sugar
2/1/4 all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 cup plain yogurt
1/2 cup vegetable oil
2 cups peeled sliced apples
1 cup fresh cranberries.
1. Preheat oven to 425°F. Spray a 12 cup muffin tray with non-stick cooking spray or line with paper liners.
2. In a large bowl, toss together the flour, baking soda, and salt Set aside.
3. In a medium bowl, whisk together the vegetable oil, plain yogurt, brown sugar, and eggs. Slowly add to the dry ingredients. Gently fold together until JUST combined.
4. Add in chopped Apples, then cranberries and slowly fold together.
5. Divide the batter into the 12 muffin cups and bake at 425°F for 5 minutes. Then reduce the oven temperature to 375°F and continue to bake for another 12-15 minutes or until a toothpick inserted into the center comes out clean. Do not overbake or the muffins will be dry. Let cool for about 5-10 minutes and enjoy.
