Date Oatmeal Squares Recipe | How to Make Date Squares

Ingredients:
For the oat crust:
2 cups (180g) Rolled oats
1 cup (125g) All-purpose flour
3/4 cup (150g) Light brown sugar
3/4 cup (170g) Softened Butter, cubed
1/2 teaspoon Ground cinnamon (optional)
1/4 teaspoon Salt
1/2 teaspoon Baking soda
For the date filling:
400g (14.1oz) Medjool dates, pitted
1 cup (240ml) Water
1 teaspoon Vanilla extract
1 tablespoon Lemon juice
Directions:
1. Place dates, water and lemon juice in a small saucepan. Bring to a boil, stirring occasionally. Reduce the heat and simmer for 5-8 minutes, stirring occasionally, until the dates are soft. Remove from heat and add vanilla extract. Let cool to room temperature.
2. Preheat oven to 350F (175C). Line a 9-inch (23cm) square baking pan with a strip of parchment paper. Set aside.
3. Make the crust: In a large bowl, combine oats, flour, salt, brown sugar and baking soda. Add the butter and mix until crumbly.
4. Press 2/3 of the mixture into the bottom of the baking pan. Spread the filling over the base, Sprinkle the remaining oat mixture.
5. Bake for 25-30 minutes, until golden brown. Let cool completely, then refrigerate for at least one hour before cutting into squares.

2 INGREDIENT APPLE OATMEAL COOKIES-* NO FLOUR, EGGS, DAIRY OR ADDED SUGAR*
Hello everyone. Thank you for joining me while I make these wonderful cookies. They are easy to make with just two ingredients apple sauce and oats. You can add chocolate chips, nuts, coconut, or cranberries. No flour, added sugar, dairy or eggs. I hope you enjoy these guilt free treats.
Recipe:
2 cups of Oats
1 cup of unsweetened applesauce
Optional:
nuts, chocolate chips, coconut and cranberries
Divide cookie dough and shape into desired size. Place cookies on a cookie sheet lined with parchment paper. These cookies will not expand so the shape you put on the cookie tray will be the shape of the finished cookie. Bake at 350 for 15-16 minutes. Let cool for 10 minutes, plate and enjoy.
Apple Caramel Cinnamon (ACC) Oat Cookies ~ Luksunshine
Hellow, Luksunshine is here to make ACC (Apple Caramel Cinnamon) Oat Cookies
I like apple pie filling, also caramel, and cinnamon goes along with apple, and I am craving for some cookies, so, why not make cookies from that combination.
ACC was born... ;p
Difficulty: Medium
Preparation time: 30 minute
Cooking time: 15 minutes
Recipe:
Mix together (dry ingredients):
½ teaspoon b.soda
½ teaspoon b.powder
1 teaspoon cinnamon powder
Pinch of salt
130 gr (1 cup) all purpose flour
100 gr (1 cup) quick oat
3 tablespoon (15 gr) corn starch to create crispy edges for the cookies! Nyum. If you don't like crispy type, skip this ingredients.
85 gr ( 1/3 cup of butter) of butter
100 gr (½ cup) of sugar (brown is preferable, but if you don't have it (like me), white sugar is okay). Normal recipe is 100 gr, but I just put 75 gr because it is too sweet for me
1 medium size egg
5 tablespoon caramel sauce
75 gr (1/3 cup) of apple filling (usually for pie)
½ cup of diced apple (from 1 medium size apple)
90 gr chopped nuts (3/4 cup) (I used coarsely ground almond, the one that cannot pass through sieve when I made macaron)
This cookies tastes better when they are made freshly come out from the oven. Just bake the cookies when they want to be consumed, and keep the rest of the dough in the fridge/freezer.
I can say that I made this cookies from many leftover...
Remember the apple pie filling for my pretty apple pie? I take some of the apple filling for this cookies. The caramel sauce is also the leftover from my salted caramel macaron, and especially the coarsely ground almond, it is from the ground almond that cannot pass through sieve when I made macaron.
So, this is the result! :)
