How To make Apple Filling For Strudel
*INGREDIENTS* 10 c Apples, slices thin
1 Stick butter
1 c Bread crumbs, very fine
1 c Sugar, or more if apples are
-tart 1 ts Cinnamon
1 Lemon rind (grandma does NOT
-use this) 1/2 Stick butter, melted
Source: Treasured Slovenian & International Recipes *DIRECTIONS* Melt stick of butter and lightly brown the bread crumbs. Set aside to cool. Sprinkle the cooled bread crumbs over the stretched dough. Spread the sliced apples evenly over the dough and sprinkle sugar, cinnamon and lemon rind over the apples. Melt the 1/2 stick of butter and when it has cooled spoon over the apples. Roll up dough. Place in well greased pan and bake in 350 F oven for one hour. notes: Be careful not to puncture the dough when transferring to the pan, otherwise the strudel will stick to the pan. *VARIATIONS* Instead of lemon rind Grandma uses lemon juice. Grandma also waits until the dough is ready to slice the apples, that way they don't turn brown. She also uses the slicer on the side of a grater to slice the apples really thin.

-PREPARE CUSTARD CREAM-
EGG YOLK 蛋黄 – 3 PCS
SUGAR 糖 – 3 TBSP
CORN FLOUR 粟粉 – 2 TBSP
MIX WELL 拌匀
MILK 牛奶 – 200ml
VANILLA ESSENCE 香草精 – ½ TSP
HEAT MILK 牛奶加热
WHISK IN HOT MILK 搅入热牛奶
STRAIN MIXTURE 蛋黄奶糊过滤
WHISK MIXTURE UNTIL THICKENED 不停搅拌至浓绸 - MEDIUM HEAT
REMOVE FROM HEAT 即可离火
POUR INTO BOWL 倒入碗
COVER WITH PLASTIC WRAP 盖上保鲜膜
CHILL冷冻 (4 HOURS)
-PREPARE APPLE FILLING-
RED APPLE 红苹果削皮切丁– 200g PEELED & FINELY CHOPPED
SUGAR 糖 – 3 TBSP
CINNAMON POWDER 肉桂粉 – ¼ TSP
BUTTER 牛油 – 1 TSP
COOK APPLE UNTIL SOFT 煮至苹果软化
POUR INTO BOWL倒入碗
COVER WITH PLASTIC WRAP盖上保鲜膜
CHILL 冷冻 (4 HOURS)
-PREPARE PUFF PASTRY-
BEATEN EGG 鸡蛋打散– 1 PC
SUGAR 糖 – ¼ TSP
FROZEN PUFF PASTRY 冷冻酥皮切半 – 10x10cm CUT HALF
BRUSH WITH EGG WASH 刷上蛋液
SPRINKLE COARSE SUGAR 撒上粗糖
BAKE 烤 (180°C - 10 TO 13 MINUTES)
COOL PUFF PASTRY 酥皮待凉
-PREPARE WHIPPED CREAM-
WHIPPING CREAM 鲜奶油 (200ml)
ICING SUGAR糖粉 (3 TBSP)
WHISK UNTIL STIFF PEAKS 打至硬性发泡
TRANSFER TO PIPING BAG 装入裱花袋
CUT PUFF PASTRY HALF 酥皮切半
FILL WITH CUSTARD CREAM 挤上卡仕达酱
ADD IN APPLE FILLING & WHIPPED CREAM 放入苹果馅&奶油
SERVE IMMEDIATELY OR CHILLED

APPLE STRUDEL- (Apfelstrudel)
This delicious apple strudel is made using puff pastry. Anyone can make this super-easy
apple strudel. Delicious filling is made with apple, cinnamon and raisins inside buttery puff pastry . . .simply irresistible. Addition
of Cream Cheese gives the strudel whole new flavor . . . adding bit of sophistication to
the buttery puff pastry. These strudels are so soft and tender, they literally melt in your
mouth. It is a great breakfast dish or also as a dessert for a family dinner.
INGREDIENTS
Puff Pastry Sheets
Egg Wash (1 Egg + 1 Tbsp. of Water and well beaten)
APPLE FILLING- (Makes Apple filling for 2 Strudels)
Approx. 350 Grams 2 & ½ Cups Apples (Cut, Peeled & Cored)
Approx. 100 Grams (½ Cup) Brown Sugar (Adjust the quantity of sugar as per the sweetness of apples)
2 Tbsp. Raisins
1 Tsp Cinnamon
1/3 Cup Water
Salt to taste
2 Tbsp. Rum – Optional
CREAM CHEESE FILLING (Makes Cream Cheese filling for 2 Strudels)
Approx. 100 grams Cream Cheese
1 Tbsp. Brown Sugar
1 Tsp Vanilla Essence
1 Egg Yolk
TIPS:
1) Adjust quantity of sugar depending on sweetness of apples.
2) Do not overcook apples. They should soften but still retain the shape.
3) Brush the strudel with egg or Milk. This gives nice golden color to the
Pastry
4) Puff pastry needs to completely thaw before using. If it is frozen
then let it thaw in the fridge overnight. Or else thaw it on the counter just
until pliable enough to unfold without cracking, but still cold to touch.
If the dough starts to feel limp, refrigerate it for 30 minutes until firm
again.
5) Don’t apply too much pressure while rolling the puff pastry
dough; otherwise the pastry may not rise.

Easy Apple Strudel made with Filo Pastry
Made with walnuts and easy filo pastry.
A simple Apple Strudel recipe. Apple strudel is a German and Austrian style dish that’s been well adopted by the Italians and many other countries. The classic strudel is made with apples but of course you can also use other fruits. Make sure you buy a good quality cooking apple so they don’t fall apart during the cooking process. This version is made using sheets of filo pastry, it’s not authentic I know, but it’s quicker and much easier than making it from scratch. I also like to toast the breadcrumbs so they resemble more of a biscuit base, this adds another level of flavour and also absorbs any moisture from the apples, resulting in a very crispy outside. I like mine packed with apples, but that’s a personal choice, you may like to roll them a little thinner. Either way, enjoy my Simple Apple Strudel with a side of vanilla bean ice cream or freshly whipped double cream
