OLD FASHIONED PIE | APPLE FLUFF Pie| Vintage Recipe From 1937!
This old-fashioned pie comes from the Household Searchlight Recipe Book which is from 1937. This recipe calls for “well-sweetened applesauce”. I couldn’t find sweetened apple sauce in my store so I added ½ cup of sugar to the filling. You will need an unbaked pie shell for this recipe. I used a 9” pie shell. My pie baked for about 25 minutes but you time may vary.
2 cups well-sweetened applesauce
2 eggs, separated
2 TBSP lemon juice
1 TBSP flour
Few grains salt
Unbaked pie shell
Combine applesauce, lemon juice, salt, flour, egg yolks, and sugar if using. Cook over hot water until thick and smooth. Let cool slightly and fold in stiffly beaten egg whites. Pour into pie crust and bake in a 425F oven for about 20-30 minutes. Pie will puff up as it bakes. Bake until filling is firm and crust is brown.

300g (2 3/8 cup) flour;
4 eggs;
220 g (1 cup) sugar;
120 ml (½ cup) milk;
50ml (1/4 cup) vegetable oil;
½ tsp vanilla essence;
16g baking powder;
a pinch of salt;
1 cup (280g) pastry cream;
2 apples.
METHOD
Preheat the oven to 180C.
Beat eggs and sugar until pale and fluffy.
Add vanilla, salt, milk and vegetable oil.
Separately whisk the flour with baking powder and add it into the liquids tablespoon at a time, while working the batter with a hand mixer.
Peel and chop one apple and add it to the batter.
Pour the batter into a greased 24 cm baking pan. Add half of the pastry cream in dollops on top, decorate with apple slices and cover with leftover cream.
Bake for 50 minutes and let cool down before serving.

1 + 1/2 tsp (6g) Baking powder
1/4 tsp (1g) Salt
180g (about 1 + 1/2 cup) Apples - peeled, cored, and diced

240g (about 2 cups) Apples - peeled, cored, and diced

For the Cream Cheese Frosting:
1/2 cup (113g) Unsalted butter at room temperature
1 cup (135g) Powdered sugar
