We challenged chefs of three different skill levels - amateur Emily, home cook Lorenzo, and professional chef Chris Scott from the Institute of Culinary Education - to make us their favorite meatloaf recipe. Once each of them had presented their take on this family pleasing classic, we asked food scientist Rose to weigh-in on their choices. So what do you think, want to try them all? Applesauce Meatloaf - A Vintage Fruit and Meat Combo
Applesauce Meatloaf is a vintage recipe that creates a soft, moist meatloaf with a tangy flavor. This recipe creates a lighter loaf and stretches the meat a little further with the addition of fruit and breadcrumbs. Cooking this meatloaf in the round pan creates a nice crispy outer edge. Pair this recipe with whatever you like to serve with your regular meatloaf. This recipe can definitely be allowed back on the modern table.
Full Recipe for Applesauce Meatloaf
1 cup soft bread crumbs
1/2 cup applesauce
1 pound ground beef
1 slightly beaten egg
2 tablespoons finely chopped onion
1 teaspoon dried celery flakes
2 teaspoons Dijon-style mustard
1/2 teaspoon salt
1/2 cup applesauce
1 tablespoon brown sugar
1 tablespoon vinegar
Combine bread crumbs with the first 1/2 cup applesauce.
Add beef, egg, onion, celery flakes, 1 teaspoon, mustard, salt, and dash pepper; blend thoroughly.
Shape into round loaf in 9x9x2-inch baking pan.
With bowl of spoon make a depression in top of loaf.
Combine remaining 1/2 cup applesauce, brown sugar, vinegar, and remaining mustard; pour into depression in meat loaf.
Bake at 350° for 1 hour.
Make 4 or 5 servings.

This Applesauce Meatloaf is fantastic.
This meatloaf can be made from any meat. It is simple and fantastic. If you notice that I don't add onions and tomatoes, its because I was serving to people who will pick them out. So, I decided to save them some time.
Applesauce Meatloaf
2 lbs. ground meat - the meat should have some fat content. If you use a lean meat, such as venison, add some ground fat to it.
1 cup applesauce
1 onion, finely diced.
1 green pepper, finely diced.
1 clove garlic, minced.
6 slices of old bread, grated.
1 egg
2 tsp. salt
2 tsp. ground black pepper
1/2 cup ketchup
Preheat the oven to 350 Fahrenheit.
Combine all of the ingredients, except the ketchup, until all ingredients are well blended.
Pack into a loaf pan, and pour the ketchup over the top of the loaf and spread evenly to cover the loaf. Bake in the oven for 2 hours.
This recipe can be made in a crockpot. To make in a crockpot, mix together all of the ingredients except the ketchup.
Pack the mixture into the bottom of the crockpot. Pour the ketchup over the top of the mixture and spread it to cover the mixture evenly.
Cover and cook on high for 1 hour. Then turn the crockpot to low and cook for 6 to 8 hours. Lift out of pot, slice and serve.
