Butterscotch Wheat Germ Cookies (12 Cookies of Christmas - Recipe 11)
Recipe: Soft, spicy, cake-like cookies, these Butterscotch Wheat Germ Cookies are sure to warm your heart this season! This recipe was my Great Grandmother's recipe and while I may have screwed up a little (I actually put twice as much butter in, but didn't realize until the video is edited and ready), with a little everyday cook smarts, we figured it out and they tasted HEAVENLY!!!

The original recipe had just 1/2 cup of butter and 1 1/2 cups of flour, but I've rewritten the recipe below to reflect how they turned out in this video.

Wheat Germ Butterscotch Cookies
(from the kitchen of Grandma Ida Halverson)
Ingredients
1 cup butter (room temp)
1 cup brown sugar
1 egg (room temp)
1 cup apple sauce (room temp)
2 ½ cups flour
1 teaspoon baking soda
½ cup wheat germ
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
¼ teaspoon allspice
Butterscotch chips
1 cup nuts (optional)
Instructions
Preheat the oven to 350°F
Mix together dry ingredients and set aside.
Cream together the butter, eggs, and sugar.
Add apple sauce and mix well (mix may look curdled, that is ok).
Add in the dry ingredients and mix until just combined.
Switch to a wooden spoon and mix in butterscotch chips and nuts (if using).
Drop rounded teaspoons full onto a baking sheet and refrigerate for 15 minutes on the tray.
Bake for 15 minutes.
Allow to cool 2-3 minutes on the pan before removing to a wire rack to cool completely.

bake for 50 minutes at 180°C/ 360°F

Low Fat Vegan No Oil Dr. McDougall Applesauce Cornbread Loaf Thanksgiving!
SORRY ABOUT ALL THE NOISE. MY SON WAS PRACTICING HIS DRUMS WHILE I WAS MAKING THE VIDEO.
I make this 3-4 times a year. The kids love it and so do all adults. It is out of all the corn breads I have made my favorite. I even made it in cupcake tins once and they were a big hit!

Applesauce Cornbread Loaf from The New McDougall Cookbook pg. 104.
Ingredients:
4 C cornmeal
2 C whole-wheat pastry flour
3/4 C millet (I used cooked)
1 t salt
1 T baking powder
1 C applesauce
3/4 C honey (I used maple syrup)
2 t rice vinegar
3 C low fat soy milk (I used what I had and that was regular)
Bake for 1 hour at 350 F. If your knife comes out clean after the 1 hour you are done. If it does not then lower your oven to 300F and continue to bake until done. Check every 10 min after the fist hour.

Whole Wheat Apple Cinnamon Muffins Recipe:

Ingredients:
2 cups whole wheat flour
1 1/2 cups apples, cubed
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1/2 cup milk
1/2 cup vegetable oil
1/2 cup walnuts, chopped
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon allspice
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Directions:
In a bowl, combine the whole wheat flour, baking soda, baking powder, cinnamon, allspice, and salt, set aside.
In a separate bowl, whisk together the granulated sugar, brown sugar, vegetable oil, milk, vanilla extract, and eggs.
Add dry ingredients to wet bowl and stir until combined.
Fold in the chopped apples and walnuts.
Pour batter into lined or greased muffin pans, fill cups 2/3 full.
Bake at 425°F for 5 minutes. Reduce to 350°F for 15-20 minutes.
Place muffins on a cooling rack.
Once cooled, enjoy your whole wheat apple cinnamon muffins!
