2 teaspoons baking powder 1 teaspoon ground cinnamon
1/4 teaspoon baking soda 1/4 teaspoon salt 2 large
eggs 1 cup sour cream 1/4 cup (1/2 stick) butter, melted 1 cup diced unpeeled apple, preferably a tart apple such as Granny Smith or Greenings Heat oven to 375 F. Grease muffin cups or use foil baking cups. Put streusel topping ingredients into a medium-size bowl. Mix with a fork, then crumble with fingers until mixture looks like chopped walnuts. To make the muffin batter, thoroughly mix fllour, sugar, baking powder, cinnamon, allspice, baking soda, and salt in a large bowl. Break eggs into another bowl. Add sour cream and melted butter, and whisk until well blended. Stir in diced apple. Pour egg mixture over flour mixture and fold in just until dry ingredients are moistened. Scoop batter into muffin cups. Top each muffin with about 2 teaspoons of the streusel topping. Bake 20 to 25 minutes, or until browned. A toothpick inserted into the center should come out clean. 1-1/3 cups whole wheat flour
1/2 cup oat bran
1/3 cup sugar
1 Tbsp baking powder

Moist muffins full of apples topped with a buttery streusel are easy to make and incredibly delicious.
Ingredients: Makes 12 muffins
-Crumb Topping
Flour ⅔ cup (80 g)
Sugar ¼ cup (50 g)
Brown Sugar ¼ cup (50 g)
Salt ¼ tsp (1.5 g)
Butter, softened ¼ cup (56 g)
-Muffin Batter
Flour 1 ½ cups (180 g)
Baking Powder 2 tsp (8 g)
Salt ½ tsp (3 g)
Cinnamon 1 tsp (2 g)
Eggs 2 (100 g)
Sugar ½ c (100 g)
Brown Sugar ¼ cup (50 g)
Oil ⅓ cup (75 g)
Vanilla Extract 1 tsp (5 mL)
Apples, grated 2 large (300 g)
Directions
1. To make the crumb topping, stir together flour, sugars and salt. Add softened butter and stir until crumbly. Set aside.
2. For the muffin batter, whisk together flour, baking powder, salt, and cinnamon until combined. Set aside.
3. Whisk eggs, brown sugar and granulated sugar until sugars have dissolved and mixture is thick and creamy. Add oil, vanilla, and grated apples (along with any collected juice).
4. Add flour mixture and stir just until there are no more streaks of flour.
5. Allow batter to rest for 30 minutes, meanwhile preheat oven to 425° F (218° C).
6. Scoop batter into muffin cups (about ¼ cup (60 mL) per muffin). Divide the crumb topping mixture evenly among muffins.
7. Place in preheated oven and bake for 10 minutes, then lower temperature to 350° F (177° C) and bake for an additional 10-12 minutes or until a toothpick comes out clean.
8. Cool in the pan for 10 minutes before removing to a wire rack to finish cooling.
