How To make Apricot Brandy Bread
1 c Dried apricots; chopped
1 ts Baking soda
1/4 c Apricot brandy; plus:
1 tb Apricot brandy
1/4 ts Salt
1/2 c Shortening
1 ts Cinnamon
1 c Sugar
1/2 ts Nutmeg
1/4 ts Allspice
2 c Flour
1/4 ts Cloves
1 c Pecans; chopped
1 c Applesauce
1 Egg
Combine apricots & brandy; cover and refrigerate overnight. Cream shortening; gradually add sugar and beating well. Add egg, and mix well. Combine one cup flour with baking soda, spices, and salt; set aside. Add pecans to apricot mixture; combine with reserved flour mixture. Toss well to coat all pieces with flour; set aside. Add remaining one cup flour to shortening/sugar mixture alternating with applesauce, (beginning and ending with flour mixture). Stir in reserved apricot mixture. Pour into a greased 9 x 5 x 3 loafpan; bake at 350 deg. for 1 hour and 15 min. or until
toothpick inserted in center comes out clean. Cool loaf in pan for 10 loaf. Notes: May be frozen up to 3 months. This is more of a sweet cake than a bread. May be wrapped in cheese- cloth and soaked with additional brandy and stored in a tin, if desired. Judy Garnett -----

No-Knead Cranberry Walnut Bread with Honey
Ingredients
* 3 cups all purpose flour, plus 3 tablespoons
* 1/2 teaspoon instant yeast
* 2 teaspoons sea salt
* 1/2 cup chopped walnuts
* 1 cup dried cranberries
* 1 1/2 cups water at room temperature
* 2 tablespoons liquid honey, plus more for brushing on after baking or other vegan honey substitute
Instructions
* Start with a large bowl and a wooden spoon, and add your flour to the bowl. Measure the yeast and add it to one side of the bowl. Measure the salt and add it to the other side.
* Using a wooden spoon, stir the yeast into the flour on its side of the bowl first and then stir the salt into the flour on its side of the bowl. This will prevent the salt mixing directly with the yeast. Give the whole mixture a few good stirs to make sure everything is combined.
* Add the cranberries and walnuts to the flour mixture and toss well to coat, and to make sure they're distributed evenly throughout.
* Measure the water. Make sure the water is at room temperature; water that is too warm or too cold can kill the yeast and prevent the bread from rising at all. Add the honey to the water and stir with a fork to combine.
* Pour the water in and stir with a wooden spoon. The dough will be rough and a bit sticky, but that's normal.
* Stir until all the flour is combined. This is not normal bread dough (there's no kneading involved in this recipe), so you don't need to be too concerned about the appearance of the dough at this point. Just make sure the ingredients are combined well.
* Cover the bowl with plastic wrap. It's a good idea to ensure there's adequate space left in the bowl for the dough to at least double in size. Place the bowl in a warm, draft-free place and let it rise for 12-18 hours.
* After the dough has risen for 12-18 hours, preheat your oven to 425 degrees Fahrenheit (if you're using convection, 410 degrees. If your oven runs hot, 400 degrees). Place your Dutch oven with the lid on in the cold oven and let it heat up with the oven. If your dutch oven is black or dark-coloured on the inside, set your oven to 400 degrees Fahrenheit instead of 425. I recommend a 6 or 7-quart dutch oven for this recipe.

Apricot Liqueur Recipe (1st Try)
3/4 cup Fresh Apricots
3/4 cup Dried Apricots
1.5 cups Vodka
1/4 cup Simple Syrup
I wasn't happy with this version to I decided to modify it and increase the apricot flavor.
Apricot Brandy Liqueur Recipe (2nd Try)
3/4 cup Fresh Apricots
3/4 cup Dried Apricots
3/4 cup Vodka
3/4 cup Brandy
1/2 cup Clarified Apricot Syrup
This is much more flavorful! The apricot flavor is much more pronounced and the brandy gives it more depth. Next time, I might go full 1.5 cups brandy and leave out the vodka completely.

Apricot bread pudding
Sort of bread pud
2 slices is small Warburtons wholemeal cut up
200 ml skimmed milk warmed add some sweetener or apple sauce instead if sweetener
Pour over bread - leave soak a short while
Add chopped fruit I chose tinned apricot
WhiZ up egg white or whites I used two
Add tsp of vanilla extract
Pour over mixture and fold in carefully
Sprinkled with almonds if liked I used 2sp
Baked approx 30-40 mins 180

Ingredients:
1 cup mixed glazed fruits, chopped
½ cup dried apricots, chopped
½ cup dried cranberries
½ cup dark raisins
½ cup candied orange peel
1 cup walnuts, coarsely chopped
½ cup golden raisins
1 cup pecans
1 cup pitted dates
½ cup green candied cherries
½ cup red candied cherries
¾ cup rhum
1 ½ cup all purpose flour
1 tsp cinnamon
½ tsp allspice
½ tsp nutmeg
½ tsp baking soda
½ tsp salt
½ cup (113g) softened butter, unsalted
1 cup packed brown sugar
3 eggs, medium
⅓ cup molasses
2 tablespoons rhum
*Divide evenly into three 6x3x2.5 loaf pans greased and lined
*Bake in a preheated oven at 165C for 1 hr 30 mins or until toothpick inserted at the center comes out clean (you can opt to bake them using baine marie method for even cooking and prevent the cake from drying out or just bake them longer at lower temperature)
*Cool completely and brush all over with rhum or brandy
*Wrap them individually in aluminum foil and refrigerate. Avoid touching with bare hands to prevent spoilage
*Brush them again with rhum after a week then repeat brushing for four weeks
*To make a chocolate fruit cake, replace 1/2 cup of flour with alkalized unsweetened cocoa powder

Ingredients :
500g/1lb 2oz strong white flour, plus extra for dusting
1 tsp salt
1 x 7g sachet fast-acting yeast
300ml/10fl oz milk
40g/1½oz unsalted butter, plus extra for greasing the tin
1 free-range egg ( I forgot to add egg on this video , add it together with milk )
vegetable oil, for greasing
For the filling
25g/1oz unsalted butter, melted
1 orange, zest only, grated
75g/2½oz soft brown sugar
2 tsp ground cinnamon
100g/3½oz dried cranberries
100g/3½oz sultanas
100g/3½oz dried apricots, chopped
( I used my Christmas mixed fruit soaked in brandy )
To finish
1 heaped tbsp apricot jam or orange marmalade
