How To make Apricot Chicken Bake

chicken breast halves

apricot nectar

teaspoon
ground allspice
1/8
teaspoon
ground ginger
1/4
teaspoon
black pepper, fresh ground
1/4
teaspoon
salt
1/3

apricot preserves
3
tablespoon
pecans, toasted
Directions:
Have the chicken breasts skinned and boned. Place the chicken in an oven-proof pan large enough that the chicken will not be overlapping.
Combine the next 5 ingredients and pour over the chicken, turning the chicken to get the marinade over all parts. Cover tightly and refrigerate overnight or at least 8 hours.
Remove from refrigerator and let stand for 30 minutes. Cover tightly with foil and bake in preheated 350 degree oven for 30 minutes. Uncover, drain and discard liquid from chicken, and keep warm.
Heat apricot preserves and brush over chicken. Bake, uncovered, 20-30 minutes longer, basting with preserves another 2 times. Remove to serving platter and sprinkle with toasted pecans.

Ingredients:
4-6 chicken thighs bone in and skin on
1/2 teaspoon Kosher salt
1/4 teaspoon coarse ground black pepper
1 packet dry onion soup mix
1 cup French dressing
1 cup apricot preserves
1 tablespoon fresh thyme chopped
Directions:
Preheat your oven to 375 degrees and set a cast iron skillet to heat on medium high heat.
Season the chicken with salt and pepper and add it to the cast iron skillet, skin side down.
Brown both sides of the chicken for 3-5 minutes.
In a bowl or large measuring cup add the rest of the ingredients and whisk them together.
Pour half over the chicken, putt the pan in the oven and cook for 25 minutes.
Pour the rest over the chicken and cook an additional 5 minutes.

Recipe ingredients
- 1 tbsp extra virgin olive oil (we love Olivado)
- 1 whole free-range chicken, cut into pieces (we love Waitoa)
- 2 onions, chopped
- 2 cloves garlic, chopped
- 3 tbsp tomato paste (we love Chantal Organics)
- 1 tbsp sweet chilli chicken sauce (we love Lee Kum Kee)
- 1 can chopped tomatoes (we love Chantal Organics)
- 1 400g can apricot halved, drained
- 1 cup chicken stock (we love Continental)
- 1 tsp chopped fresh thyme (we love Superb Herb)
We made this dish in a Le Creuset Signature Cast Iron Round Casserole.
Cooking method
1. Heat the oil in a large frying pan or saucepan and brown chicken pieces for 2-3 minutes on both sides until lightly browned. Set chicken aside.
2. Drizzle a little more oil into the same pan and fry onion and garlic until soft, about 3-4 minutes.
3. Add back the chicken, along with the tomato paste, sweet chilli sauce, herbs, tomatoes, apricots, water and chicken stock. Roughly break up the apricots with a wooden spoon.
4. Stir all ingredients together and partially cover with a lid.
5. Simmer on medium heat for 15-20 minutes until the chicken is cooked through. Serve hot with rice, couscous or mash, and greens. Sprinkle fresh thyme on top.
