1 pound skinless boneless chicken breast 1/4 teaspoon paprika 1 teaspoon canola oil 2 cloves garlic -- minced 1/3 cup low sugar Apricot Preserves 1/4 cup orange juice 1 tablespoon minced fresh cilantro 1/4 teaspoon nutmeg 1/4 teaspoon allspice 1. Rinse the chicken and pat dry with paper towels. Sprinkle the chicken with the paprika. 2. Spray a large, unheated nonstick skillet with nonstick spray. Heat the skillet over medium-high heat. Add the chicken and cook for 4 minutes. Turn the chicken over and cook for 4 to 6 minutes more or until the chicken is no longer pink. Transfer to a serving platter and cover to keep warm. 3. Add the oil to the skillet and heat over medium-high heat. Add the garlic. Cook and stir for 30 seconds. Stir in the preserves, orange juice, cilantro, nutmeg and allspice. Bring to a gentle boil. Remove from the heat and pour over the chicken.

How you doin? CK here. So, Peg and CK (not me, the other one) went out for the afternoon, so I decided to throw something together for dinner. Fast and easy chicken dish, my mother's apricot glazed chicken. A fan favorite, as they say.
Ingredients: 2-2.5 lb chicken pieces 8 oz apricot preserves 1 pkg onion soup mix 4-6 oz Russian dressing (or Catalina if you can’t find red Russian) 3-5 tblsp ketchup
Pat dry the chicken and salt/pepper. Combine the other ingredients in a large bowl Marinate if you have the time, or glaze chicken pieces
Pam a pan Space chicken apart nicely 350 oven for 45 minutes to cook to temperature 400 oven for 15 more minutes to brown the glaze

It's hard to believe that with just 4 ingredients you can have such a delicious meal. This Apricot Chicken is sweet and tangy and perfect served with rice! This is one of those recipes I used to make a lot and I've kind of forgotten about, but thanks to In the Kitchen with Karen on YouTube, I was reminded of how much I love this dish. Thanks Karen!
Apricot Chicken
Ingredients 1 to 2 pounds of chicken (boneless skinless chicken breasts, tenderloins, or thighs) 1 cup apricot preserves 1 cup dressing, Russian, Catalina, or French 1 packet of a onion soup mix
Instructions Place chicken in a baking dish. Mix the preserves, dressing, and soup mix together and pour over chicken. Bake for 45 minutes, uncovered, in a 350 degree oven. Serve with rice and vegetable of your choice.
