How To make Arroz Amarillo Con Camarones Yellow Rice & Shrimp Casserole
1/2 c Olive oil
1 sm Onion; chopped
1 sm Green pepper; chopped
1 Garlic clove; minced
1 Parsley sprig
1 lg Ripe tomato
- peeled, seeded & chopped 1 Bay leaf
1/4 ts Nutmeg
1/4 ts Cumin
1/4 ts Thyme
1 pn Saffron; toasted
1 lb Shrimp, raw
- shelled, deveined 1 c -Hot water
1/4 c Dry white wine
1 tb Lemon juice
1 tb Salt
1/2 ts Hot sauce
2 c Long grain white rice
2 1/2 c -Water
1/2 c Beer
Cooked peas Pimiento strips Parsley bouquets Use a 3-quart casserole with lid. An earthenware casserole is preferable, especially if you wish to add a touch of Spain to a dinner party. However, I know that good earthenware is hard to find today. I have 2 casseroles that I've had for 15 years. Heat oil in casserole. Saute onion and pepper until transparent. Add garlic, parsley, tomato, bay leaf, nutmeg, cumin and thyme. Mix well, cover, and cook over low heat until mushy (about 15 minutes). The saffron should be toasting on the lid in the little brown paper. Add the shrimp to the saute and cook until it turns pink. Dissolve the saffron in the 1 cup hot water. Combine with wine, lemon juice, salt and hot sauce. Pour into casserole, stir to mix, and cook covered 10 minutes more. Now add the rice and the 2 1/2 cups of water. Distribute ingredients well in casserole. Bring to a quick boil, STIR ONCE, and place in preheated 325 degree F. oven for only 20 minutes - NI UN MINUTO MAS! Remove from oven, uncover, and garnish with peas, pimientos, and parsley. Pour beer over all. Cover again and allow to stand 15 minutes longer, before serving.

Vietnamese Shrimp Fried Rice
Mmm simple Vietnamese garlic fried rice (Com Chien Toi Trung) with fried shrimp!
Super simple, I even bought pre-cooked/peeled shrimp for this and fried it in Annatto sesame oil for that dark sunset orange shrimp ???? color!
The secret to get that extra yellow, eggy color and taste is to mix in one raw egg with your cold day old rice prior to frying up the rice. I also like partially scrambling eggs separately as well for those bigger egg chunks in your fried rice! Mmmm
2-3 cups day-old rice
1 egg
+ 2 eggs (beat with 1 tsp of fish sauce)
1 tsp sesame oil
6 cloves, finely minced garlic
2 tsp Maggi Seasoning Sauce
1/4 cup of thinly sliced scallions (I like just using the green parts, but you can use the white parts as well)
1. Cut up scallions
2. Whip 2 eggs with 1 tsp fish sauce, 1 tsp water and set aside.
3. Add 2-3 cups one or two day old rice in a large bowl and add 1 egg ontop of the rice and mix with hands, break apart all rice and set aside.
4. In small sauce pan heat 1 tbs sesame oil with 1/4 tsp annatto powder and cook until fragrant and orange and set aside
5. Toss shrimp in bowl with annatto/sesame oil along with 1/4 tsp salt and some fresh cracked pepper (use just the top part of the oil that is clear without the annatto powder residue).
6. Pan fry shrimps for about a minute on each side until golden and crisp edges, set aside.
7. Whip two eggs with 1 tsp fish sauce, 1 tsp olive oil and 1tsp water and scramble in big chunks and set aside.
8. In a pan on medium-high heat, add a generous drizzle of sesame oil and add in the finely minced garlic. Sauté until garlic starts to soften and becomes fragrant and add rice in and fry up.
9. Add the eggs back in and about a tsp, add scallions or 1-2 tsp Maggi Seasoning Sauce, lightly break up the scrambled eggs so they're mixed with the rice. Add a little salt and black pepper, and shrimp and fry for a few minutes.

Hey Dolls this is a meal that will take no longer than 45 minutes to make & very budget friendly. Seafood rice is very easy to make & can feed 6-7 people, my family loved it.
Ingredients
Zatarains yellow rice (2 boxes)
Swanson Seafood stock
Large raw shrimp
Imitation crab meat (if you want to be bourgeois use fresh jumbo lump crab meat)
3 pepper & onion mix (I used frozen but you can use fresh onions & peppers)
Fresh Minced Garlic
Unsalted butter
Old Bay seasoning
Onion powder
Knorr Tomato Bullion
Parsley Flakes
1. In a large pot add 3 pats of unsalted butter, 2 boxes of rice, 4 cups of seafood stock, 1 cup water. Stir occasionally on medium heat & once all of your liquid has dissolved turn heat off & cover your rice. Allow the rice to cool down & sit for 15 minutes & fluff with a fork. Your rice should not be sticky, it should be fluffy
2. In a large bowl add your shrimp & crab meat along with your seasonings & let your seasonings marinate your mix for 5 minutes. While your seafood is marinating in a large pan add butter & 3pepper onion blend & sautee until your veggies cook down. Once veggies are cooked down add your seafood & sautee until your shrimp is cooked, your seafood mix should take no more than 8 minutes to cook.
3. Allow your seafood & veggies to cool about 10 minutes end once cool add it to your rice. When adding to your rice slowly fold into the rice (don't mix too much because your rice with start to clump & get sticky)
4. Place your seafood rice in a large baking dish & serve

Seasoned rice with shrimp
My famous jumbo shrimp over yellow rice with broccoli , seasoned corn, garlicbread & my cove sauce!
Cori’s cove shrimp and yellow rice recipe
Clean and peel raw shrimp
Season with 1TSP adobo , season salt , garlic salt , old bay , parsley , onion powder , lemon pepper and some lemon juice and lime juice
Let marinate for 30 mins
In a sauté pan over medium heat add in 1TBS butter and .5TBS minced garlic cook for 2-3 mins , add in 2TBS lemon juice and 2TBS lime juice and 2TBS orange juice and left over marinade , Add shrimp and cook until pink
As soon as it’s fully pink it’s done
Don’t over cook shrimp they’ll get chewy
Cook yellow rice per package instructions
For the cove sauce ( it’s just the sauce the shrimp were cooked in ) no other instructions necessary
