Dad's Arroz con Pollo
2 tablespoon (30 mL) olive oil
4 chicken thighs (skin on)
2 drumsticks (skin on)
1 yellow onion, diced
3 garlic cloves, minced
3 Roma tomatoes, peeled and minced
½ red bell pepper, chopped
1 teaspoon (5 mL) cumin powder
½ teaspoon (2.5 mL) tumeric powder
¼ teaspoon (1.25 mL) paprika
1 teaspoon (5 mL) saffron
Pinch of red pepper flakes
Salt
1¾ cup (14-ounce bag, 390 g) of Valencia rice
4 cups (950 mL) chicken stock
In a dutch oven, heat olive oil over medium-high heat. When oil is hot, add chicken, skin side down, until browned, about 5 minutes. Flip the chicken, using tongs, and cook on opposite side until golden brown, about 3 minutes. Transfer to plate and set aside.
Reduce heat to medium, add onion, and cook until translucent, about 7 minutes. Add garlic to the top of the onions and cook until fragrant; 2 minutes or so. Throw in tomatoes and red bell pepper. Using a wooden spoon, scrape the bottom of the pot removing any of the chicken fat pieces (hello! flavor!!). Next, add spices: cumin, tumeric, paprika, saffron, crushed red pepper, a teaspoon of salt and mix.
Dump in rice, being sure to coat with the tomato mixture. Place chicken atop of rice mixture, and pour just enough chicken stock to cover the rice, about 2 cups (475 mL). Bring the pot to a simmer and then reduce heat to low. Cook, covered, for about 45 to 50 minutes, and until rice is tender.
Note: Throughout the cooking process, I checked on it every 15-20 minutes or so and topped it off with about ¼ cup (60 mL) of stock each time. In the end, I added 4 cups (950 mL) of chicken stock total. Also, in the last 15 minutes, I salted to taste, adding about 1 teaspoon (5 mL) more of salt.

750 ml de caldo de pollo
100 ml de vino blanco
3 cucharadas de aceite de oliva virgen extra
1/2 cebolla
1 diente de ajo
1 zanahoria pequeña
Algunos guisantes
1 cucharadita de cúrcuma
Sal al gusto
Un poco de pimienta molida
1 hoja de laurel
1/4 de pastilla de concentrado de caldo de pollo

INGREDIENTS
Rice
2 Cups Long Grain White Rice I used Basmati Rice
2 tbs Cooking Oil I used Avocado Oil
1 Yellow Onion, Diced
4-5 Garlic Cloves, minced
1 packet Sazon Seasoning
1 tbs Chicken Flavored Bouillon
16 oz Tomato Sauce
4 Cups Water
Chicken
2 lbs Boneless Skinless Chicken Breasts or thighs if you prefer
2 tbs Butter
2 tbs Cooking Oil I used Avocado
1 tbs Garlic Powder
1 tbs Onion Powder
1 tbs Chili Powder
1 tbs Cumin
1 packet Sazon Seasoning
1 tsp each Salt and Pepper
Cheese Sauce
12 oz Can of Evaporated Milk
16 oz Queso Blanco Velveeta
7 oz Can of Diced Chilis
8 oz Grated Pepper Jack Cheese
INSTRUCTIONS
For the Rice
In a skillet over medium/high heat, toast the rice in the oil, stirring continuously for 3-4 minutes. Add in the onion and garlic and cook for 2-3 more minutes.
Stir in the Sazon, the bouillon, the tomato sauce and the water. Bring to a boil. Put the lid on. Reduce heat to a simmer and let cook for 15 minutes. DO NOT STIR! (make sure it is on a very low heat setting so it doesn't burn).
Take it off the heat, and let it sit for another 15 minutes and again DO NOT STIR. After 15 minutes, gently stir it and it should be perfectly cooked!
Chicken
Slice the chicken into very thin strips.
Heat the butter and oil in a skillet over medium/high heat. Add the chicken in, then add the spices listed above. Cook and stir constantly until thoroughly cooked, which should only take about 4-5 minutes.
Cheese Sauce
In a sauce pan add all of the ingredients listed and cook over medium heat, stirring constantly until all of the cheese is melted. Allow it to sit for a few minutes to thicken up.
Assemble the rice on the plate, followed by some chicken, and then drizzle as much cheese sauce on top as you want. If desired, warm up tortillas to stuff the mixture into and enjoy!

As you can see, not much is needed to prepare this dish. You can feed
4-5 people with this recipe and still have some left over.
The flavor of the chicken stock is what makes it so delicious.
The more you make this dish the better you get at it. The trick is the
broth, if your rice seems that its hard, its ok to add more broth about
1/2 cup then cover and let it stand for another 5 minutes.
Serve with a side of refried beans and tortillas.
