1/4 c Butter Or Margarine 1/4 c Sugar 1 Egg 1 Pureed Avocado 1 c Toasted Slivered Almonds 1 c Milk 2 c Self-Rising Flour Preheat oven to 400?F and prepare muffin pans. Cream butter and sugar. Beat in the egg. Blend in the avocado, milk and nuts. Lastly add the flour and mix gently but thoroughly until the ingredients are moistened and combined. Place in pans and sprinkle each with topping. Bake for 20 to 25 minutes. Note: Add a dash of grated lemon rind. Almonds may be toasted quickly in the microwave or in a dry frying pan, stirring constantly to stop burning.

INGREDIENTS 1/2 cup applesauce 1/4 cup maple syrup 1 egg or (flax egg for eggless recipe) 1/4 cup olive oil 1 tsp vanilla extract 1/2 ripe avocado 1 cup almond flour 1/2 cup rolled oats 1 tsp baking soda 1/2 tsp baking power 1 cup fresh or frozen blueberries
DIRECTIONS 1.) Preheat oven to 350 F. 2.) All wet ingredients into #BlendJet and blend. 3.) In a separate bowl, add the rest of ingredients (except blueberries) and mix. 4.) Add the wet batter to the dry and combine. 5.) Fold 1/2 cup of blueberries. 6.) Pour the batter into the mini muffin tins. 7.) Bake the muffins for 20-23 minutes or until a toothpick inserted in the center comes out clean. 8.) Store leftover muffins in and airtight container and freeze. If you don’t want to use maple syrup, remove it completely or add less.
