How To make Bacalhau'A Bras
1 1/2 lb Bacalhau (dry weight)
1 1/2 lb Potatoes
1 1/2 c Olive oil
2 Garlic cloves, peeled
8 Eggs
Salt & pepper Fresh parsley, chopped Olive oil Tomatoes Lettuce Black olives
Soak the cod fish at least overnight, longer if possible. Carefully remove bones and pieces of skin. Peel and cut the potatoes in long, thick match sticks. Heat the olive oil in a large skillet, add the garlic cloves and fry till golden. Discard the garlic. Stir-fry the flaked cod. Add the potato sticks, previously lightly fried in another skillet. Season with salt and pepper. Let cook for a while over a low fire and meanwhile beat the eggs in a bowl. Scramble over the cod and potatoes and let cook till everything is set together, Sprinkle with the chopped parsley, decorate with black olives, and serve surrounded by lettuce leaves and tomato slices. Variation: Bacalhau 'a Lisbonense': In the same skillet you first fried the potato sticks lightly fry 2 medium onions finely sliced. Add to the main skillet when you add the potatoes. ----

Bacalhau à Brás is a traditional Portuguese dish made with cod, potato sticks, onion, garlic, olives, eggs and parsley.
It's probably the most famous way to eat codfish in Portugal, so today we're going to make the most traditional version that everyone loves! In this version I leave the eggs very creamy and moist, also because I don't like dry cod!!
Ingredients List:
- 1 or 2 sliced onions
- About 200 g potato, cut into thin sticks
- 3 or 4 cloves of garlic
- 5 eggs
- Black olives
- parsley
- 1 piece of codfish

One pot wholesome meal from the Portuguese cuisine.
BACALHAU À BRÀS
Ingredients
400 grams dried surmai
4 eggs
Crushed black peppercorns to taste
Salt to taste
3 tablespoons oil
2 medium potatoes, peeled and cut into thick strips
1 large onion, sliced and layers separated
1 tablespoon chopped garlic
½ tablespoon chopped fresh parsley
Black olives for garnishing
Fresh parsley sprig for garnishing
Method
1. Slit the fish horizontally without cutting through and place in a deep tray. Add sufficient water and set aside for 25-30 minutes.
2. Beat eggs with crushed peppercorns and salt.
3. Remove the flesh from the fish, discard bones and cut the flesh into pieces.
4. Heat oil in a non-stick pan. Add potato strips and salt, mix and sauté till lightly browned. Remove from pan and set aside.
5. Add onion and garlic in the same pan, mix and sauté till onion turns golden brown.
6. Add fish flesh pieces and mix. Add potato strips and mix. Add beaten eggs, mix well and cook till fully done. Add chopped parsley and mix well.
7. Garnish with olives and parsley sprig and serve hot.

Classic Portuguese salt cod casserole
2 Pounds Salt Cod
2 Pounds Potato
2 Large onions
6 Hard boiled Eggs
2 Cups of Milk
2 tsp of chopped garlic
1 can of black olives pitted
1/4 cup chopped parsley
1/4 cup Extra Virgin Olive oil
Soak the salt cod for 24 hours change the water six times over the course of 24 hours.
Shred the card into small pieces
Bring the milk to a simmer add in the Cod and Potatoes and Simmer on low - until the potatoes are tender
Sauté the sliced onions until golden in olive oil. When the onions reach a golden color add in the chopped garlic and cook for additional five minutes.
Drain the excess milk from the cod and potatoes. At this point taste the potatoes to see if there is enough salt in the dish if not add salt at this time.
Mix in the cooked onions.
Slice the eggs in circles, reserve the nice pieces for garnish on top of the casserole and chop up all the end pieces of eggs to mix into the casserole
Put the potatoes, cod, chopped eggs, half of the olives, parsley and onions in a casserole dish. Drizzle with a quarter cup of extra-virgin olive oil, and bake at 350° for 30 minutes
Garnish the top of the casserole with the nice slices of hard-boiled egg and the rest of the black olives

1 fillet of salted cod ( soaked overnight)
2 small onion (sliced and split separate)
1 bay leaf ( I did not add)
1 small potato (chopped in very fine as shown in video)( cut and deep fry)
Olive oil
5-6 garlic cloves
2 eggs
1/2 tsp pepper
1/4 cup white wine
