How To make Bacon& Cheddar Drop Biscuits
1/4 cup onion
finely minced
4 slices crisply cooked bacon :
finely minced
(reserve 2 tablespoons of bacon fat) 1 3/4 cups flour
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cold vegetable shortening
3/4 cup extra sharp Cheddar cheese -- coarsely grated
2/3 cup milk
In a skillet, cook the onion in the reserved fat over moderately low heat, stirring, until it is softened; let mixture cool. In a small bowl combine the onion mixture with the finely minced (do this in a food processor) bacon; season with freshly ground pepper. Into a bowl, sift together the flour, the baking powder, the baking soda, and the salt. Add the shortening and blend the mixture until it resembles coarse meal. Stir in the bacon mixture and the Cheddar; add the milk and stir the mixture until it just forms a soft sticky dough. Drop the dough by rounded tablespoons onto a buttered baking sheet. Bake the biscuits in the middle of a preheated 425 oven for 15 to 17 or until pale golden brown. Makes about 16 biscuits.

Do you love biscuits...and bacon...AND CHEESE!!!! Well, hold your horses! I have just the recipe for your next breakfast round up treat! Say it with me... BACON AND CHEDDAR BUTTERMILK BISCUITS!!! Woo hoo! Not only are these super tasty, they are also pretty easy to make, and your dad/husband/grandpa/uncle/partner will LOVE them for a special Father's Day breakfast!!
SAFETY REMINDER: If you are a kid, make sure to have an adult help you with anything like turning on the stove top or oven, using a mixer, or using a knife.
Ok, so...you don't like cheddar cheese? No problem! Use whatever kind of cheese you like...or none at all! And I suppose if you don't like bacon (THE HORROR!!!), you could always make these plain. (BACON BACON BACON!) No matter what you add- or don't add- this is a great biscuit recipe that you can transform in any way your heart desires.

FULL BACON & CHEDDAR BISCUIT RECIPE
PREHEAT OVEN TO 400 F
IN A LARGE MIXING BOWL, STIR TOGETHER:
2 1/4 cups flour
1 TBL white sugar
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
GRATE OVER FLOUR MIXTURE:
1 stick of cold unsalted butter
USE A FORK AND KNIFE (or pastry cutter if you have one) TO CUT THE BUTTER INTO YOUR FLOUR MIXTURE. KEEP GOING TILL IT RESEMBLES A COARSE MEAL.
ADD TO FLOUR AND BUTTER MIXTURE:
1 cup cooked, medium diced bacon
1/2 cup shredded cheddar cheese
STIR TOGETHER AND SET ASIDE.
IN A MEDIUM BOWL, WHISK:
1 large egg
1/2 cup buttermilk (or buttermilk substitute- recipe below)
ADD WET INGREDIENTS TO DRY INGREDIENTS, AND STIR JUST TILL INCORPORATED. FORM DOUGH INTO A BALL AND PRESS IT ONTO A LIGHTLY FLOURED SURFACE TILL IT'S ABOUT 2 FINGERS THICK (approx. 1).
USE A BISCUIT CUTTER OR KNIFE (ADULTS ONLY!!) TO CUT THE DOUGH INTO WHATEVER SHAPE YOU WANT. (DO NOT USE A GLASS. IT WILL SEAL THE EDGES AND PREVENT LAYERS FORMING IN YOUR BISCUITS.)
PUT THEM ON A BAKING SHEET. BAKE IN THE OVEN FOR 15-20 MINUTES UNTIL THE BISCUITS ARE GOLDEN BROWN.
BUTTERMILK SUBSTITUTE RECIPE
(YIELDS 1 CUP; TWICE THE AMOUNT YOU NEED FOR RECIPE ABOVE)
TO A MEASURING CUP, ADD:
1 TBL apple cider vinegar (or lemon juice)
1 cup (minus 1 TBL) whole milk or half and half
NO NEED TO ACTUALLY MEASURE YOUR MILK. ONCE YOU HAVE THE VINEGAR IN THE MEASURING CUP, JUST POUR IN YOUR MILK TILL YOU HIT THE 1 CUP MARK. STIR. LET SIT FOR ABOUT 5-10 MINUTES. THE VINEGAR WILL CAUSE THE MILK TO CURDLE AND BECOME SOMEWHAT THICK AND LUMPY.
NOW YOU CAN USE IT TO REPLACE THE BUTTERMILK!

Drop Biscuits have a beautiful golden brown crust that is nice and crispy. Yet when you split one in half, inside it is wonderfully soft and tender. These biscuits are so easy to make; no kneading, rolling, or shaping the biscuits. All you do is mix the ingredients together with a fork, and then 'drop' the batter by heaping spoonfuls onto you baking sheet. Serve the biscuits with soups or stews, or cut in half and spread with butter and jam and/or clotted cream. These also make a great Breakfast Sandwich; just cut in half and fill with a slice of cheese, a bacon or sausage patty, and a fried or scrambled egg. They also make a delicious Strawberry Shortcake.
