Bacon Wrapped Meatloaf
This Bacon Wrapped Meatloaf is inspired by Nigella Lawson’s classic meatloaf recipe. I add buttery, caramelized onions to my meat mixture and wrap the entire meatloaf in bacon for the most flavorful and moist results. This meatloaf also makes the BEST leftovers!

Bacon Wrapped Meatloaf
(I am sharing the measurements from my video, but it can easily be halved!)
1 large yellow onion, chopped or diced (your preference depending on how big you like your pieces of onion in your meatloaf!)
2 Tbsp. butter
2.5 lbs. ground beef (80/20)
2 eggs
1 cup. Italian seasoned breadcrumbs
salt & pepper
1 Tbsp. Worcestershire sauce
1 lb. regular bacon
In a large skillet over medium heat, melt the 2 Tbsp. of butter. Add the diced onion, and stir to coat in butter. Reduce heat to medium low and cook the onions for 15-20 minutes, stirring periodically until they have softened and turned a golden brown color. Remove from heat and allow to cool slightly.
Preheat oven to 400 degrees. In a large mixing bowl, place the ground beef, eggs, breadcrumbs, salt & pepper to taste, Worcestershire sauce, and the cooled onions. Mix together by hand until evenly incorporated.
Spray a foil lined baking tray with nonstick spray. Place the meat mixture onto the tray and form into a loaf shape. Wrap the entire meatloaf in bacon overlapping each slice of bacon slightly as you place them on top. You can use the full slice of bacon and tuck the ends under your meatloaf, or you can cut the slices of bacon in half to just cover the top and sides of your meatloaf.
Bake at 400 degrees for about an hour. When cooked through, the meatloaf should be 160 degrees internally. Cool slightly before slicing. ENJOY!
This meatloaf makes awesome leftover meatloaf sandwiches served hot or cold!

How to Make Bacon Wrapped Meatloaf
This bacon wrapped and cheese filled meatloaf is perfect for someone who is not on a low calorie diet. This was my first time making this and I have made it many times since.
Ingredients:
1 lb. ground beef
1 cup. bread crumbs
1 teaspoon of salt
1 teaspoon of pepper
1 egg
2 lbs of bacon
1/4 cup of brown sugar
1/4 cup of BBQ sauce or ketchup
Bake at 300 degrees for about 90 minutes. Check every 30 minutes. Using a meat thermometer, check that temperature is about 160 degrees in the center of the meat. If you want the bacon to be crispier, bake an additional 5 minutes on 475. Allow to cool a bit before serving.

Ingredients ⬇️
1 pound lean beef
1 cup Panko bread crumbs
1/2 cup milk
6 tablespoons ketchup, divided
1 tablespoon Montreal Steak Seasoning
1 tablespoon Worcestershire sauce
1 large egg
1 tablespoon brown sugar
8 ounces mild cheddar cheese, shredded
1 pound bacon, uncooked
Instructions ⬇️
Preheat oven to 350°F.
In a large bowl combine beef, bread crumbs and milk. Pouring milk directly over bread crumbs. Add 2 tablespoons ketchup, Worcestershire and steak seasoning. Set aside.
In a small bowl, crack egg and beat it slightly. This helps prevent overworking the meat while combining, resulting in a tougher meatloaf. Add egg to large bowl with meat mixture. Combine well with hands, do not overwork the meat mixture.
Gently press meatloaf into bowl and divide in half. Place first half into 7″x10” (or larger) baking dish and form into a flat meatloaf Gently press the center in to create a rim around the outside of the meatloaf. Add shredded cheese into the center of the meatloaf.
Form remaining half of meatloaf in the bowl into a size similar to the meatloaf in the pan. Set op top and press the sides together to seal in the cheese. Form into a loaf shape about 1½ – 2” tall.
You may notice cracks in the loaf. Run your hands under warm water and then across the meatloaf to smooth the cracks out. Set meatloaf aside.
In a small bowl combine 4 tablespoons ketchup and 1 tablespoon brown sugar. Mix well with a fork. Apply glaze evenly all over your meatloaf (except the bottom).
Arrange bacon slices over the top of the meatloaf. Start by wrapping a piece of bacon across the front side and a second piece of bacon across the back side. Arrange remaining bacon over the top. Tuck the ends of the bacon under the meatloaf (this prevents curling).
Place meatloaf in the oven and bake until bacon is crispy, about 1 hour.
Remove from oven. Allow to rest uncovered for 20 minutes.
Serve and enjoy!

Meatloaf-
* 2 lb ground beef
* 1 lb thick cut hickory smoke bacon strips
* 1 red bell pepper, chopped
* 1 small yellow onion, chopped
* 3 cloves garlic, minced
* 1 jalapeno, optional
* 1/2 cup bread crumbs
* 1 tsp onion powder
* 1 tsp garlic powder
* 1 tsp smoked paprika
* 1/2 tsp cayenne
* 3 dashes Chipotle Tabasco
* 3 dashes Worcestershire sauce
* 1 1/2 tsp salt
* 1 tsp black pepper
* 1 tblsp olive oil
Glaze-
* 1/2 cup ketchup
* 2 tblsp brown sugar
* 1 tsp smoked paprika
Equipment:
* Knife
* Cutting Board
* Mixing Bowl
* Measuring Spoons
* Measuring Cups
* Whisk
* Saute Pan
* Loaf Pan
* Sheet Pan
* Aluminum Foil
* Oven
* Stove
Directions:
Preheat oven to 350ºF. Sauté your peppers, onions, jalapeños, and garlic in a pan over medium high heat until tender. Sit aside to cool. Combine ground beef, chopped peppers, onions, jalapeños, garlic, bread crumbs, and eggs in a large bowl. Mix well. Add Worcestershire sauce, Chipotle Tabasco, onion powder, garlic powder, smoked paprika, salt, and pepper to meatloaf mix. Mix until everything is well blended together. Line your loaf pan with bacon. Be sure to overlap your bacon strips so that no parts of the pan is showing! Add your meatloaf mix to the loaf pan. Pack your meat tight ;) Flip your loaf pan over onto a sheet pan lined with aluminum foil. The meatloaf should release easily onto the tray. Cook your meatloaf in the oven for 50 minutes. Meanwhile make your glaze. After 50 minutes, remove meatloaf from oven and brush on your glaze. Return meatloaf back to the oven to finish cooking for another 20 minutes. Finally, remove the meatloaf from the oven. Brush on remaining glaze and let your meatloaf rest for at least 10 minutes before slicing.
Glaze- Combine the ketchup, smoked paprika, and brown sugar in a small bowl and mix well.
Slice, Serve, Enjoy :)
