Copycat Bailey's Irish Cream - how to make it at home
This replaces an earlier version, made a little better with better ingredients. This is a smooth, slightly sweet drink with a delicate flavor of whiskey. Note: I live near Costco where I can buy a 1.75L bottle of Kirkland Signature brand Irish Cream Liqueur (supposedly made by the Bailey's company) for about $15. It's good, but when I want something special to share with friends who come to visit around the holidays, I make my own.

Hello, friends!! Wow, you made it to my second vlog!
This recipe makes about 445ml of DIY Bailey’s Irish cream.
INGREDIENTS
1/2 cup (118 ml) heavy cream or all purpose cream
7 ounces (197 ml) sweetened condensed milk
1 1/2 tablespoons chocolate syrup
1/2 teaspoon instant coffee granules (or Espresso if you want a stronger coffee flavor)
1/2 teaspoon vanilla extract
1/2 cup (125 ml) Irish whiskey (I used Jameson)
Optional: Organic cacao nibs (used as toppings)
For the HOME-MADE Chocolate syrup:
1/2 cup powdered cocoa
1/2 cup white sugar
1/2 cup water
A dash of salt
1/2 teaspoon vanilla extract
Mix all the ingredients together (except for the vanilla). Whisk over medium heat until boiling, stir constantly for at least 3 mins. Remove from heat once it’s fully combined. Add the vanilla and mix well. Store syrup in an airtight container in the fridge - it would stay good for a month.
Feel free to tweak this recipe to your preference! You may add more cream or chocolate syrup or whiskey! Let me know in the comments how it turned out for you. :)

Irish Cream Recipe
Around St. Patrick's Day, Baileys Irish Cream always seems to make a comeback. In today's video, Chef Jason Hill shares his favorite homemade Irish Cream recipe.
This homemade Irish cream liqueur is great mixed into an Irish Cream Cake or served over vanilla or coffee ice cream. You can also use it to make Irish cream coffee by adding 1-2 ounces to each cup of hot brewed coffee.
This recipe came from my mom, so I hope you enjoy it!
Irish Cream
3 eggs
2 tablespoons chocolate syrup
2 tablespoons vanilla
1 3 /4 tablespoons water
14 ounces sweetened condensed milk
1 cup Irish whiskey such as Jamesons or Bushmills
2 caps (1/2 ounce) Brandy
1 cup whipping cream
Blend eggs, chocolate syrup, vanilla and water in a blender or whip well in a mixer. Add condensed milk, whiskey and brandy by blending in blender quickly. Blend in unwhipped cream, just blending. Do not overmix.
Refrigerate 24 hours. This allows the flavors to meld and helps the alcohol cook the egg.
This Irish cream liqueur will keep about 2 months in the refrigerator. Enjoy! SUBSCRIBE!

Keto Bailey's Irish Cream Recipe
12 servings
2/3 cup sweetener of choice (I like Monkfruit)
1 tablespoon dark, unsweetened cocoa powder
1 teaspoon instant espresso powder
2 cups heavy cream
1 1/2 cups Irish whiskey (I used Jameson)
1/2 teaspoon vanilla extract
1 teaspoon almond extract
Place the sweetener, cocoa powder and espresso into a small pan. Whisk to mix.
Slowly whisk in the cream.
Place the pan on the stove, at medium heat, and bring to a simmer. Reduce the heat and simmer for about 10 minutes, stirring constantly. Make sure all of the cocoa powder and sweetener are dissolved.
Mix the whiskey with the vanilla and almond extract. Mix with the cream and cocoa powder mixture.
Cool down completely. Strain the liquid in a fine sieve to get rid of the thin crust that forms on top.
Transfer to a bottle and refrigerate. This will keep for about 2 weeks.
