How To make Bake and Baste Chicken (Boston Chicken)
1/4 c Canola oil
1 T Honey
1 T Lime juice
1/4 t Paprika
4 Chicken breast halves,
-washed and patted dry Preheat oven to 400 degrees. In a small bowl, combine canola oil, honey, lime juice and paprika. Place chicken, skin side up, in a 7x11
inch baking dish. Apply mixture to chicken pieces in a single layer. Bake in over for 35-40 minutes, basting every 8-10 minutes or until well browned and juices run clear when you cut into the thickest part of chicken. Remove from oven. Cover with foil for 15 minutes. This softens chicken and keeps it hot until served. Serves 4. From: Pat Stockett Date: 12-07-94

Herb Rotisserie Chicken
With saute garlic spinach and roasted red potatoes
1each 2-3LB Whole Chicken
1 each Lemon, juice
1 T. chili powder
1 T. granulated powder
2 T. brown sugar
1/8 t. cayenne pepper
2 T. oregano leaves
½ T. cumin
1 T. smoked paprika
1 t. salt
1 t. pepper
Kitchen string (if using a rotisserie oven)
Method:
In a mixing bowl combine all the ingredients. Rub the marinade over the chicken and inside the cavity as well. Place in a half sheet pan and put in the oven for 1 hour at 350 F. In a rotating Rotisserie oven do 300f for 1 hour and 35 minutes.
You can split the chicken in half and serve with garlic spinach and roasted red potatoes.

¼ cup Apple Cider Vinegar
⅓ cup Vegetable Oil
2 tbsp. Brown Sugar
4 Garlic Cloves minced
1 whole Roasting Chicken trussed & ready for roasting

0:10 Combine apple cider vinegar, vegetable oil, brown sugar, and minced garlic in a small bowl. Whisk to combine.
0:19 Place the chicken in a large glass bowl and pour the mixture over it.
0:23 Slather your chicken with the marinade to coat it well.
0:27 Cover the bowl with a cling film and let it marinate overnight.
0:30 On the next day, remove the cover and flip the chicken to marinate it on the other side.
0:36 Let it marinate for at least 4 more hours before cooking.
0:40 Take it out of the fridge and leave at room temperature for 20 minutes.
0:45 Set the chicken on a roasting pan and preheat the oven to 350 degrees F.
0:51 Cook the chicken for at least 45 minutes to 1 hour and 30 minutes.
0:55 Remove the chicken from the oven and let it rest for 5 minutes.
0:59 Serve it with coleslaw, focaccia bread, and ranch dressing.
