How To make Baked Beef& Rice
1 1/2 lb Ground beef
1 c Rice, regular
1 sm Onion
chopped
2 tb Bacon drippings
1 1/2 ts Salt
1/2 ts Pepper
1 t Paprika
2 oz Olives, stuffed :
sliced
2 c Tomato juice
1 1/2 c Water boiling
1/2 c Cheese, Cheddar :
shredded
Saute ground beef, rice, and onion in bacon drippings. Pour off drippings. Add remaining ingredients except cheese; mix well. Place in a 1-1/2 quart casserole. Cover tightly; bake at 300 degrees for 1 hour. Uncover; sprinkle with cheese and continue baking about 10 minutes or until cheese is melted. SOURCE: Southern Living Magazine, April, 1974. Healthy Beef & Pepper Rice Bowl
1 pound beef bite pieces or ground beef
1/8 teaspoon salt
1/8 teaspoon black pepper
1/3 chopped green bell
1/3 chopped red bell pepper
1/3 chopped onions
1/2 beef stock
2 cups cooked rice
Add 1 tablespoon olive oil to a non-stick skillet. Add beef and cook over med-high heat, cook 3-5 minutes, stirring often. Add salt, black pepper, and bell peppers, Continue cooking for 8 minutes, stirring constantly to keep it from burning the bottom of the pan. Add onions, beef stock and cooked rice. Cook, stirring for about 2 minutes or more. Remove from the heat and let it sit for 2 minutes before serving.

Mexican Beef & Rice Casserole
1 Tbsp Olive Oil
1 1/2 lbs Ground Beef
1 Medium Onion - diced
3 - 4 Cloves Garlic - minced
1/3 C Taco Seasoning
1 Tbsp Tomato Paste
1 10 oz Can Rotel - Tomato & Green Chili's
1 C Fire Roasted Tomatoes
1 C Frozen Corn
1 15 oz Black Beans - drained & rinsed
1 Lime - juiced
Salt & Pepper to taste
1 1/2 C Rice
2 C Chicken Broth
2 C Cheddar/Monterey Jack Cheese - shredded
Garnish with
Scallions - Chopped Roma Tomatoes - Cilantro
In a large skillet drizzle olive oil, add onions cooking 2 - 3 minutes, add garlic cooking until fragrant.
Add chop meat and brown until no longer pink. Drain fat is needed.
Stir in taco seasoning until well blended, add tomato paste, rotel, fire roasted tomatoes, corn, black beans, salt & pepper & lime juice. Stir until all incorporated. Add chicken broth and rice. Cover and lower heat. Simmer for 20 - 25 minutes or until rice is tender.
Top with shredded cheese, cover and cook until cheese is melted.
Garnish with scallions, roma tomatoes & cilantro
