Craig's Cheesy Baked Southern Grits
Here's a quick, delicious recipe for Southern Style Cheesy Baked Grits. **Full Recipe in Description**
This recipe always comes out perfectly and makes a great main breakfast dish! It is great as a main dish, with sausage as a side (or you could crumble it up and add it before you bake in the oven). It is also a wonderful side dish for sausage biscuits, fried chicken, meatloaf, and is very easy to prepare.
Here's the recipe:
Ingredients:
1 ½ cup (225 g) “5-minute” grits. I prefer the Jim Dandy brand.
6 cups (1,440 ml) water
2 Tablespoons (30 g) butter
2 teaspoons (12 g) salt
¼ teaspoon (125 mg) ground pepper
3 eggs
1 Tablespoon (15 g) baking powder
¼ cup (40 g) all-purpose flour
2 cups (1 bag) (226 g) cheddar cheese, shredded (divided)
Directions:
Step 1: Preheat oven to 325 degrees (160 C).
Step 2: On the stovetop, bring the water and butter to a boil. Whisk in grits, cover and simmer at lowest setting for 5 minutes.
Step 3: Once grits are cooked, remove from heat and allow to cool for about 10 - 15 minutes. In a mixing bowl, whisk eggs, flour, and baking powder together. Quickly whisk in egg mixture and 1 cup of cheddar cheese.
Step 4: Spray a baking dish with cooking spray and pour in grits mixture. Bake at 325 degrees for 45 minutes. Remove and spread remaining cheddar cheese on top. Bake for additional 5 minutes.

Easy Grits Casserole - Perfect for Breakfast on Busy Mornings!
RECIPE BELOW. When we're busy as a family and need a hearty breakfast on the go, Grits Casserole is our go-to solution. It's tasty and filling, and you can also dress it up with your favorite sauce or salsa (I eat mine with roasted Hatch Chiles, but if you've been around this channel, you probably knew that).
Recipe:
1 cup Grits, cooked (slow cooked are best, but quick grits are just fine)
8 eggs
8 oz (1pkg) Shredded Cheddar Cheese (add more if you want)
4 oz (1/2 pkg) Shredded Monterey Jack Cheese (add more if you want)
1 lb Breakfast Sausage, cooked and drained
Salt & Pepper to taste.
Cook grits according to package directions, and cook off the Breakfast Sausage (sausage can be done the day before). Mix Sausage into Grits. In a large bowl, beat the eggs and add the cheese. Then add the Grits & Sausage and mix well. Spread into a 9x13 pan prepped with cooking spray. Cover with foil and bake at 350˚F for 60 minutes. Remove foil and cook 10 more minutes to brown the top. (If it still seems a little wet, cook 10 more minutes or until done. Let cool and serve or store in the fridge in squares for quick breakfasts!

Baked Cheese Grits - How To Make Southern Baked Cheese Grits - Breakfast and Brunch Recipe
Hello my Friends and welcome to my Southern Kitchen, Happy Mother’s Day to all the Mothers out there!
Today I am making a classic dish that we love down in the South, Cheese Grits but with a twist, Baked Cheese Grits!
Gooey, cheesy, and full of flavor it would sure to make your mouth water; great to serve for Mother’s Day Brunch or any Brunch occasion and everyone will enjoy this! If y’all love Grits like I do, you will love this recipe!
2 cups evaporated milk
1/2 cup quick cooking grits
1 large or extra large egg
1 (16 ounce) package Colby-Jack cheese, shredded (divided)
3 tablespoons unsalted butter, plus more for serving
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon white or black pepper
Ellen’s Magic: You may double this recipe if you like; also use any cheese of your choice: Sharp Cheddar, Monterrey Jack, etc
Preheat Oven to 325 Degrees
Spray an 8x8 inch square baking dish with cooking spray or lightly greased with butter and set aside.
In a large pot or medium saucepan on high heat, add in the evaporated milk and bring to a boil. When it comes to a boil, slowly add and whisk in the grits and whisk until well combined. Add a ladle of the grits mixture to the egg and whisk to slowly temper. Add the egg mixture back into the grits and continue whisking until well combined and thickens. Remove from the heat and add in the 3 tablespoons butter, 1 cup of cheese, onion powder, garlic powder, salt, and pepper; stir until the butter and cheese melts. Pour the grits mixture into the prepared baking dish and top with the remaining cheese. Bake for 30 minutes until cheese melts. Remove from the oven and let it cool for 10 minutes before serving and enjoy!
