Shopping List: 1 bag Pepperidge Farms Cornbread Stuffing Mix 1 1/2 bags Pepperidge Farms White Bread Stuffing Mix 1 lb Medium Shrimp 1 lb Bay Scallops 1/2 lb Lump Crab 1 tbsp better than bouillon Lobster base 1 yellow onion - diced 2 stalks of celery - diced 1 tsp thyme 4 cups stock (homemade preferably) Red and Green Bell Pepper Diced 1/2 cup chopped parsley Juicy Crab Seasoning
Directions: In large pot, melt butter over medium heat. Add veggies and cook until tender. 2. Next, add bay scallops and shrimp. Then add garlic paste, and fresh herbs. Mix to combine ingredients. Taste and adjust seasoning if needed. Cook until veggies are tender and seafood is cooked. 3. Add most of your stock and turn the heat off. (reserve 1/2 cup or so to thin the mixture later as needed) 4. Add your bread. It will seem like a lot at first but the bread will begin to absorb the moisture. Fold this together and then taste one last time before adding eggs. Once the stuffing has the flavor you want, whisk your eggs and add to the stuffing along with chopped parsley. 5. Spray casserole or baking dish with cooking spray and add stuffing to it. Bake at 375 degrees for 45-60 minutes or until browned on top and registers at least 150-160 degrees internal temp

BAKED STUFFED FISH II Red Bream Recipe with Paneer Cheese Stuffing
Baked Stuffed Fish is my very own fusion recipe using Paneer or Chana, which is Indian Cottage Cheese and Spicy Mexican Cheese together. I don't think Paneer has been used to stuff fish & I thought that it was high time that someone created an Indian style recipe, which used both paneer & fish. I have used Red Bream fish for this recipe but normal Sea Bream fish would taste equally good. Sea Bream fish is also called Orata & Dorado & is a very meaty, delicious fish. I would have used a native Indian fish for this recipe, but due to the never- ending lockdown in the UK, I have been unable to go to my Indian supermarket, which happens to be quite far away from where I live & in a restricted area, with high levels of Covid-19 cases. One day, I hope to cook this recipe using a native Indian fish! Meanwhile you can try out this simple yet extremely flavorful recipe & let me know what you think!

Stuffed Baked Fish with Cheesy Shrimp & Lump Crabmeat

Makes about 8-12 fish : tilapia/catfish
For filling: 2 cups lump crab meat 1/2 pound raw shrimp 1 tbsp Cajun seasoning 1 tbsp Onion powder 1 tbsp Garlic powder 1/4 tsp Salt 1 tsp black pepper 1/2 tsp ground cumin 1 tsp paprika 2 tbsp fresh parsley Juice of 1/2 a lemon 1 egg 1/2 cup breadcrumb 3 tbsp cream cheese 1/2 cup-1 cup shredded Mexican blend cheese (or cheese of your choice)
