Ingredients
Dry
-1 Cup /120G AP Flour
-3/4 Tsp Baking Powder
-1/4 Tsp Baking Soda
-1/4 Tsp Salt
Wet
-1-2 Ripe Bananas (100G-200G)
-2 Tbsp / 30mL Vegetable Oil
-2Tbsp / 30G Melted Unsalted Butter
-1/4 Cup / 50G Brown Sugar
-1/4 Cup / 50G Sugar
-2 Tbsp / 30mL Buttermilk (Room Temperature)
-1/2 Tbsp Vanilla Extract
-1 Large Egg
Topping
-2 Tbsp / 25G Sugar
Bake 425F / 218C for 8 mins then reduce heat to 350F / 175C for 6-8 Mins or golden brown.

Chunky Banana Bran Muffins

Yield: 10 to 12 muffins
Ingredients
1 cup unprocessed wheat bran
1 cup buttermilk (shaken)
4 tablespoons unsalted butter, at room temperature
1/4 cup light brown sugar, lightly packed
2 extra-large eggs, at room temperature
6 tablespoons unsulphured molasses
1 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup raisins
1 cup large-diced bananas
1/2 cup chopped walnuts
Directions
Preheat the oven to 350 degrees F. Place paper liners into 1 (10 or 12-cup) muffin tin.
Combine the bran and buttermilk and set aside. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, until light and fluffy. With the mixer on low, add the eggs, 1 at a time. Scrape the bowl and then add the molasses, orange zest, and vanilla. (The mixture will look curdled.) Add the bran/buttermilk mixture and combine.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low speed, slowly add the flour mixture to the batter just until combined. Don't overmix it! Fold in the raisins, bananas and walnuts with a rubber spatula.
With an ice cream scoop or large spoon, fill the muffin cups to the top and bake for 25 to 30 minutes, until a cake tester comes out clean.

How to make Banana Bran Muffins|Super Easy Recipe
This Banana Bran Muffins are healthy, super delicious and cam easily be grabbed on the go for a quick notorious breakfast even your kids will love it.
Ingredients;
1&1/2 cups rolled oats
1 cup finely chop over ripe banana
1/2 cup neutral oil
2 free range eggs
1/4 cup milk
3 tsp lemon juice
3/4 cup brown
2 tbsp golden syrup
1 tsp vanilla essence or paste
1 cup plain flour
1 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
1/2 tsp mixed spice
pinch of salt
METHODS;
Preheat the oven to 190C. Grease a 12-pan muffin tray or line with paper case.
In a non-metallic mixing bowl,mix together the oil,eggs,milk,lemon juice,golden syrup,vanilla,oats and banana to combine evenly.
in another bowl,sift together the flour,baking powder,baking soda,cinnamon,mixed spice sugar and salt.Add to the wet mixture and stir to combine evenly - don,t over mix.though.Spoon the batter into the prepared muffin tins almost to the top.
Bake in the center of the oven for 15-18 minutes, or until toothpick inserted into the center of a muffin comes out clean.
cool in the tray for a few minutes,then transfer to baking rack to cool.
