This Bran Muffins recipe is an easy and delicious breakfast or grab-and-go snack! These muffins are full of fiber and are so soft, moist, and flavorful! You won’t be able to stop at just one when you try these tender muffins. Since they're so easy to make it's a recipe I love to whip up with my kids. These homemade muffins are a great breakfast treat and my boys love them in their lunchbox! By the way, you can totally add raisins, nuts, blueberries, or any of your favorites to make this recipe your own.

Made with a combination of rolled oats and whole wheat flour they’re wholesome, filling and are just the right kind of sweet for a healthy snack. Refined sugar-free.
Maple Molasses Blueberry Oatmeal Muffins Recipe
Makes 1 dozen muffins
Ingredients:
¾ cup milk
½ cup plain yogurt
¼ cup pure maple syrup
¼ cup Crosby’s Fancy Molasses
5 Tbsp. grape seed oil (or canola)
1 large egg, room temp
1 tsp. vanilla
1 ½ cups rolled oats (not instant)
1 cup + 2 Tbsp. whole wheat flour
1 ½ tsp. baking powder
½ tsp. baking soda
1/4 tsp. salt
½ tsp. powdered ginger
¾ cups blueberries (frozen or fresh)

✅Ingredients
• 1½ cups 100% all bran cereal
• 1 cup buttermilk
• 1/3 cup coconut oil melted
• 1 large egg
• 2/3 cup brown sugar
• 1/2 teaspoon vanilla extract
• 1 cup all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt
✅Instructions
00:00:53 - What kind of bran cereal to use for muffins
1️⃣ 00:00:44 - Preheat oven to 450 degrees Fahrenheit. Lightly spray a muffin pan with nonstick spray or line with paper cups.
2️⃣ 00:00:53 - In a medium sized mixing bowl soak bran cereal and buttermilk for about 10 minutes until it gets all soggy.
3️⃣ 00:01:30 - Add in melted coconut oil, egg, brown sugar, vanilla extract, flour, baking soda, baking powder and salt. Stir thoroughly. This mixture will be very thick.
4️⃣ 00:02:34 - Divide the batter equally among the 12 muffin cups, filling almost all the way full.
5️⃣ 00:02:57 - Bake in the preheated 450 degree oven for 5 minutes. Without opening the door, reduce the heat to 350 degrees and let the muffins continue baking another 8 to 10 minutes. Remove from the pan and cool on a wire rack.

Molasses Muffins

Ingredients
1-1/4 cups softened butter
1 Cup sugar
4 eggs
1/2 Cup molasses
2 tsp soda
1 Cup buttermilk
4 Cups self-rising flour
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1 Cup raisins
Instructions
Cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add molasses.Combine soda and buttermilk, add to mixture blending well. Combine flour and spices, add to molasses mixture. Stir in raisins mixing well.Fill greased muffin tin 2/3 full and bake at 400 degrees for 15 miles. Makes 3-1/2 dozen.This batter will keep in refrigerator for 2 weeks if kept tightly covered.

There are a gazillion things you can do with bananas and peanuts and this is just one of them! They go together like ram-a-lam-a-lamma gad-ing-ga-di-ding-gi-dong!
Recipe -
For the banana caramel...
420g caster sugar
220ml water
200-220g squished banana
180ml double cream
For the Peanut Brittle...
220g caster sugar
4 tbsp water
125g chopped roasted and salted peanuts
15g chopped butter
For the cupcakes...
125g self raising flour
125g caster sugar
135g unsalted butter, soft
1/4 tsp bicarbonate of soda
pinch of salt
75g smooth peanut butter
2 lg eggs
1.5 tbsp whole milk
For the Banana Caramel Buttercream...
200g unsalted butter, soft
330g icing sugar, sifted
1/3 of your banana caramel
