How To make Banana Pecan Bread
1 1/2 pound loaf:
1 1/2 cup (6 ounce)
all-purpose flour 2/3 c sugar
1 ts baking powder
1/2 ts baking soda
1/2 ts salt
1/3 c vegetable oil
2 x large eggs, lightly beaten
1/4 c dairy sour cream
1 ts vanilla
When beep sounds, add: 2/3 c mashed banana
1/3 c finely chopped pecans
Leavened with Baking Powder Requires a bread machine
Into baking pan measure flour, sugar, baking powder, soda, and salt. Add oil, eggs, sour cream, and vanilla. Insert pan securely into unit Close lid. Select "CAKE" setting; press "START" When beep sounds, after about 5 minutes, add mashed banana and nuts. Press "START: again.
The "COMPLETE" light will flash when cake is done.

Ingredients:
▪︎ 2 1/2 Cup All purpose flour
▪︎ 3 medium Sized Bananas
▪︎ 3 Large Eggs
▪︎ 1 tbs Baking powder
▪︎ 1 tsp Baking Soda
▪︎ 1 Cup White Sugar
▪︎ 1 Cup Oil
▪︎ 1 tsp Pure Vanilla extract
▪︎ 1 1/4 Milk
▪︎ 1 tsp Salt
▪︎ Pecans(as much as you like)
Bake @350°F for 45-50 mins. As Oven may vary, insert toothpick/stick and when it comes out dry. Then off oven and allow to cool before slicing

The almond butter swirl on top and almond butter in the batter adds a savory edge and toasty flavor, while coconut oil and yogurt keeps it tender and moist. Special Equipment:
4 1/2 x 8 1/2-inch loaf pan, measured from the top
Ingredients:
Coconut oil for the pan
3 tablespoons plus 1/3 cup almond butter (4.6 oz / 130g)
1 tablespoon plus 2/3 cup sugar (5 oz / 143g)
1 teaspoon plus 1/2 cup virgin coconut oil (4 oz / 115g), gently warmed to liquefy
1 1/3 cups all-purpose flour (6.1 oz / 173g)
1 teaspoon baking powder (0.14 oz / 4g)
1 teaspoon Diamond Crystal kosher salt (0.11 oz / 3g)
1/2 teaspoon baking soda
1/4 teaspoon ground cardamom
2 large eggs (3.5 oz / 100g), cold from the refrigerator
1 cup mashed banana (8 oz / 227g), from about 2 very ripe large bananas
1/3 cup plain whole milk Greek yogurt (2.8 oz / 80g)
1 teaspoon vanilla extract

Banana Bread with Pecans:
Ingredients:
2 cups all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp salt
4 overripe banana
1/2 baking powder
1 cup of sugar
1 cup unsalted butter melted and cooled
2 large eggs
1 tsp. vanilla extract
1/2 pecans, finely chopped
confectioner sugar, for dusting
Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan or two small loaf pan.
-Mash 2 of the bananas with a fork in a small bowl. Set aside.
-Mix the remaining bananas and sugar with an electric mixer. Add melted butter, eggs, and vanilla.
-Beat well and scrape down the side of the bowl.
-Mix into dry sifted ingredients just until incorporated. You don't need to overly blend.
-Fold in the pecan nuts and the mashed bananas with a rubber spatula into the batter mixture.
-Pour the batter into the prepared loaf pan; smooth the surface.
-Bake for about 1 hour and 15 minutes or until golden brown and a skewer inserted into the center of the loaf comes out clean.
-Rotate the pan periodically to ensure even browning.
Note: Don't be alarmed if the banana bread develops a crack on the center of the loaf, that's no mistake, it's typical.
-Turn out the loaf onto a rack to cool.
-Cool the bread for about 10 minutes; Turn out the loaf onto a wire rack to cool completely before slicing.
-Slice and dust with confectioner sugar and serve.
