How To make Barbara's Applesauce Meat Loaf
2 lb Ground turkey
1 Egg; slightly beaten
1/2 c Quick-cooking oatmeal
-(not instant) 1/3 c Unsweetened applesauce
1/2 c Finely chopped onion
1/3 c Corn kernels (optional)
1/4 c Minced red bell pepper
1/4 c Minced flat-leaf parsley
1 tb Worcestershire sauce
2 ts Salt; or to taste
Freshly ground black pepper 1/4 c Ketchup
1 ts Prepared mustard
IN A LARGE BOWL, combine the turkey, egg, oatmeal, applesauce, onion, corn, red pepper, parsley, 2 teaspoons Worcestershire sauce, salt and pepper and mix just until the ingredients are blended. Using a 10-inch non-metal pie plate, form the meat into a circle about 8 inches in diameter and 2 inches high. Combine the ketchup, mustard and 1 teaspoon Worcestershire sauce in a small bowl. Spread it over the top of the meat loaf. Cover the top with wax paper, place the dish in the oven and cook the meat loaf on 100 % power (high) for 10 minutes, rotating the pan after 5 minutes. Remove the dish, carefully take off the waxed paper, and let the meat loaf stand for 10 minutes before slicing.

Porkchops 101 | Pork Chops and Applesauce Recipe | Manitoba Canola | Fidel Gastro
Matt is back with another outstanding recipe and some words of wisdom when it comes to selecting your cut of pork.
Many of you will no doubt remember the golden age of The Brady Bunch. There is an episode referenced in this video where Alice makes pork chops and applesauce for the Brady family. This was the inspiration for this delicious recipe and we are certain the even Alice would approve if she could taste the end result.
We have all from time to time cooked a pork chop and ended up with a dried out, hard as leather, hard to cut piece of meat. Matt is here to make sure that never happens to any of us again. After the video intro Matt dives right into pork chops 101. While pork may not seem like that mysterious of a meat Matt explains in no uncertain terms why selecting the right cut from the right place will have a massive impact on the end result.
Matt urges us to get our meat directly from a butcher. He also explains the different types of chops that can be purchased and why you may want to choose on type over the other. For the best result from this recipe you are going to want the thickest cut you can get, which would be a double-chop.
We see Matt squirting down the chop he selected with Manitba Canola oil and then standing it up on one side in the center of the pan. He has a long history of experimenting in the kitchen and this method is a prime example.
Preheat your oven to 275', stand your pork chop up on one side, and bake it for about 45 min. You can use a similar method on the barbecue grill just be sure your grill temp is set to 275' as well. When it is close to done you would just sear it on the grill.
While your pork chop cooks up bring your focus over to the other star of the show, the applesauce. Bring a deep pan up to high heat and add canola oil. Pour in your apple mixture and allow it to cook for about 5 minutes, stirring regularly. When the apples start to soften add about a quarter cup of water continuing to stir. Add in maple syrup and let the apples continue to cook for about 5 more minutes.
If you prefer a chunkier apple sauce then your work here is done. For those of you that like a nice smooth texture to your applesauce Matt recommends an immersion blender. Use it to puree your applesauce to the desired level of smoothness. Add in a splash of apple cider vinegar and your applesauce is now complete.
Now remove your pork chop from the oven and generously season both sides with salt and pepper. Prep a large searing pan and place it on the stove, setting it to high heat. Add canola oil to the pan and place your pork chop into it. Sear your pork chop for 2-3 minutes per side and don't forget to sear the edges as well. This helps to render off the fat on the cap as it is being cooked off when you put it into the oil.
When you have a nice golden brown pork chop on your hands place it on a cutting board and trim off the bones as well as the fat. After that slice into some medium sized pieces and serve it with your freshly made applesauce.
