My Cowboy Cookie Recipe, Inspired by Former First Lady Laura Bush
I used to make these cookies a lot in college. I would make them for bake sales and for most memorably to me “cookie Wednesdays” when I was an intern. Anyways, This recipe was inspired by Former First Lady Laura Bush’s cowboy cookie recipe. I found it annoying to have to measure so many ingredients so my adjusted recipe skips measuring the chocolate chips, pecans, and coconut by using common package weights for these things. Her original recipe I think could be easy divided into 1/3 batch, but for my recipe I keep it the full size-again for the ease of not measuring so many ingredients. Also, if you can’t find exact weights below for the products, don’t stress out, just try to get close to it. If you like a little more coconut, you can add more and take out a little of oatmeal. It’s pretty flexible that way. Enjoy.
1.5 cups butter (3 sticks) softened
1.5 cups white sugar
1.5 cups brown sugar
3 eggs
1 tsp vanilla
3 cups all purpose flour
1 tsp salt
1 tbs baking powder
2 tbs ground cinnamon
3 cups quick cooking oatmeal
10 oz chocolate chips or chunks, any kind-milk chocolate, semi sweet, bitter sweet
10 oz chopped pecans
7 oz sweetened shredded coconut
Yields 8.5 dozen golf ball sized cookie balls
Preheat the oven to 350 degrees Fahrenheit. Cream the softened butter with sugar and brown sugar. Add the eggs one at a time then add the vanilla. While the butter and eggs are mixing, combine flour, salt, baking powder, and cinnamon in a bowl. Slowly add the flour to the butter mixture. You can reserve a small amount of flour to coat the “goodies” you are about to mix. Combine the oatmeal, chocolate chips, pecans, and coconut in the bowl and mix well. With the mixer on low, slowly add half the “goodies” to the dough. Remove from the mixer and mix in the remaining “goodies” by hand. Scoop the dough into golf ball sized balls and bake 12 on a parchment sheet for 11-12 minutes. Allow the cookies to cool for a minute or two on the baking sheet before transferring the cookies on the parchment paper onto a cooling rack to cool completely.
Bake frozen dough for 12-13 minutes at 350 degrees Fahrenheit.
