Barbecue Chicken Smoked on Offset Pit and Mopped Old School Style.

Sometimes you just need a good old Barbecue Chicken fix. This recipe takes me back to those family 4th of July BBQ’s where the grill was slap-full of what seemed like endless pieces of smokey, glazed chicken goodness.
Cooking barbecue chicken is really easy. All you need is a grill or smoker set up for indirect cooking and as much chicken as you want to cook. You can season the chicken however you like. I use my Killer Hogs AP rub mixed with a few other ingredients to create what I call a Chicken Rub (recipe is below).
Once the smoker is running at 275-300 degrees it’s ready to cook. I ran with Post Oak wood on this smoke, but Hickory, Pecan, or Apple are all good choices (use whatever wood you like).
Season the outside of each piece of chicken with the seasoning and get it on the pit. Now comes the fun part…turn on some music, crack a few beers and kick back and barbecue some chicken!
You’ll want to stick around the grill turning the pieces every 30 minutes or so and making sure the grill stays in the 275-300 zone. Don’t freak out if it gets above or below just hang in there.
Every time you open the pit, baste the chicken with the mopping liquid to keep it juicy. I mix Zesty Italian dressing with BBQ Rub, BBQ Sauce, Worcestershire sauce, soy sauce, and water. (recipe below). If you have a favorite mopping concoction, by all means use it!
After a couple hours of flipping and mopping the chicken is ready for the sauce. This is the point where it’s gonna start getting real good! I place a small aluminum pan on the pit beside the chicken and add 1 bottle each of my Killer Hogs The BBQ Sauce & Killer Hogs Vinegar Sauce. Let the mixture heat up and it’ll thin out a little.
Use the same mopping brush to baste the sauce over the chicken on both sides and keep on cooking until the chicken is done - 165 in the breast and 175 in the dark meat. I really like the wings, legs, and thighs to creep up closer to 200 internal because they stay tender and juicy.

Barbecue Chicken Ingredients:
- 24 pcs Chicken (mix of Breast, Legs, Thighs, & Wings)
- 1 cup Chicken Rub *recipe below
- 1/2 gallon BBQ Chicken Mop *recipe below
- 1 bottle Killer Hogs The BBQ Sauce
- 1 bottle Killer Hogs Vinegar Sauce
Barbecue Chicken Directions:
1. Prepare offset smoker or any BBQ Grill for indirect cooking at 275 degrees using your favorite wood for smoke flavor (I used Post Oak for this recipe)
2. Season the outside of each piece of chicken with the Chicken Rub - substitute your favorite rub if you like
3. Place the chicken on the smoker and cook until the internal temperature in the breast reach 155 degrees. Turning and basting with the BBQ Chicken Mop* every 30 minutes.
4. Pour the BBQ Sauces into a small aluminum pan and place on the smoker to warm. Once the internal temperature in the breast hit 165 start brushing the sauce on both sides and continue flipping the chicken every 15-30 minutes until the sauce caramelizes on the outside and the internal temperature reach a minimum of 165 in the white meat and 175 in the dark.
5. Remove the BBQ Chicken from the smoker and serve.
Barbecue Chicken Rub
- 1/2 cup Killer Hogs AP
- 2 Tablespoons Sugar
- 1 Tablespoon Granulated Onion
- 1 Tablespoon Cumin
- 1 Tablespoon Paprika
- 1 Tablespoon Chili Powder
- 1 Teaspoon Cayenne Pepper
Barbecue Chicken Mop
- 32oz Water
- 16oz Zesty Italian dressing
- 8oz BBQ Sauce
- 1/2 cup BBQ Rub
- 2 Tablespoons Worcestershire Sauce
- 2 Tablespoons Soy Sauce

- Sausage of your choice
- 1 Package of bacon cut in half
- Toothpicks
- Postal Barbecue Original Rub
- BBQ Sauce
Pig Shot Filling (Makes about 14)
- 1 Block of Cream Cheese
- 3/4 cup of shredded cheese
- 1 diced jalapeño (add more for added heat)
- Postal Barbecue Original rub (to taste)

Pulled Pork BBQ Baked Potato
WHAT MALCOM USED IN THIS RECIPE:

This is one Kicked up Baked Potato right here! I start with jumbo size baker potatoes and coat the outside with bacon grease and Killer Hogs Hot Rub. They go on the pit at 350°F for about 1 1/2 hours or until I can stick a skewer in without resistance.
Once tender, I slice off the tops (reserve those for cook snacks) and scoop out the insides. Add a bunch of butter and sour cream, season with my Killer Hogs AP Seasoning (salt, black pepper, & garlic) then dump in the cheese. Finish it off with sliced green onion and crumbled bacon, stir together, and stuff back into the potato shells.
Now comes the good stuff - pile on a heaping handful of pulled pork. If you have left overs this is a great place to use it or you can do as I did and slow cook a pork butt overnight just for this recipe.
Drizzle the pulled pork with a good dose of Killer Hogs The BBQ Sauce and top with more cheese - That’s right - more cheese!! Place the loaded-up taters back on the pit and cook until the cheese melts; it’ll take about 10 minutes.
Garnish the tops with more crumbled bacon and sliced green onion then dive in to the best potato you’ve ever tried!!
Pulled Pork BBQ Baked Potato Ingredients:
- 4 Large Russet Potatoes
- 1lb Bacon - thinly sliced
- 8oz Sour Cream
- 2 cups Shredded Cheddar Cheese
- 2 cups Shredded Monterey Jack Cheese
- 1 stick Butter
- 1 bunch Green Onions thinly sliced
- 2lbs Pulled Pork
- 2 Tablespoons Killer Hogs Hot Rub
- 2 teaspoons Killer Hogs AP Seasoning
- 1/4 cup Killer Hogs The BBQ Sauce
Directions:
1. Cook bacon until crispy and chop. Reserve bacon grease.
2. Prepare pellet grill for indirect cooking at 350°F.
3. Wash potatoes and pat dry with paper towel.
4. Drizzle potatoes with bacon grease and season with Killer Hogs Hot Rub.
5. Place potatoes on grill and cook until tender. (when a skewer slides in easily they’re done)
6. Slice the tops off each potato and scoop out the insides into a large bowl. Add butter, sour cream, half the cheese, Killer Hogs AP Seasoning, bacon, and green onion (reserve a little bacon and green onion for garnish).
7. Stir to combine and spoon the mixture back into each hollowed out potato.
8. Top with a heaping pile of pulled pork and drizzle with Killer Hogs BBQ Sauce.
9. Add the remaining cheese to the top of each potato and return to the pit for 10 minutes or until the cheese melts.
10. Garnish with remaining green onion and crumbled bacon and serve.

honey- 2 tbsp
crushed garlic - 6-7 cloves

corriander powder - 1/2 tbsp
red chilli powder - 1 tsp (or more)
black pepper- 1 tsp
cumin/jeera powder - 1 tsp
garlic paste - 2 tsp

This is the marinade that will coat your barbecued vegetables very well due to the addition of flour, and make it a little crispier
Ingredients:
marinade 2 as base - 3 to 4 tbsp
rice flour - 2 tbsp
gram flour/chana ka atta- 2 tbsp
add spices if necessary (corriander, chilli, salt etc)
curd - to lighten the consistency if needed
Add the vegetables and paneer in the marinade and let it sit for about 15 to 20 minutes. Here we are barbecuing : onions, tomatoes, capsicum, half cookedd potatoes, paneer etc

After the veggies get marinated well, prepare the skewers. meanwhile preheat your OTG or your skillet (if you are using a gas stove) for 10 minutes at 180 degrees or medium flame.

Place the skewers in the OTG in grill mode (the top coil running) for about 6-7 minutes (till it gets a litte charredd), re-apply the marinades on the vegetables and turn sides. Let it cook for about 5 more minutes.
OTG temperature: 180-200 degrees

Make sure to re-apply the marinade after a few minutes of cooking as this is very thin in consistency, doesn't stick as much. But it will taste amazing if you re-coat the bbq mid-way!
